Do you love to watch the katsuobushi (aka dried bonito flakes) dance on top of your takoyaki when they arrive at your table? Us too. These thin, delicate shavings are made from smoked and dried fish, providing a rich, smoky umami flavor. Did you know takoyaki, the iconic Japanese octopus ball snack, was invented in 1935 by street vendor Tomekichi Endo in Osaka?

Inspired by akashiyaki (an egg-rich dumpling from Hyōgo), Endo replaced the beef and konjac filling of the popular radioyaki with octopus.

Originally from the Kansai region, it became a national sensation by the 1960s!
