Some chefs find the kitchen later.
Ours found it before he could properly reach the bench.
His dad is from Bologna, so fresh pasta, lasagne and tortelloni were just part of growing up. When his dad started travelling for work, an 8-year-old started finding his way around the kitchen. Nothing fancy at first. Just one dish, one mistake, one small cut, one lesson at a time.
At 16, a dinner at a Michelin-starred restaurant in the mountains of Cortina changed everything. Not because the food was fancy, but because it made him feel something he hadn't felt before. He’s been trying to give that feeling to other people ever since.
14 years in hospitality. One obsession.
Now he's here, and we think the timing is pretty perfect.
