Where did the inspo for our current dinner menu come from? It started with dolmades. 💥

Chef Matt was snacking on some dolmades when he got thinking about the flavours he loves in Eastern Mediterranean and Middle Eastern food… and why they work so well together.

“The tanginess, fresh herbs, warm spices and earthy flavours all work together in a really distinctive way. That balance became something I wanted to carry through the whole menu.”

Fun fact, the tasty lamb rump on our menu was originally going to be a steak, but Matt realised skewers made more sense. More caramelised edges, more char, more flavour. It’s sous vide first to keep it tender, then grilled with a souvlaki-inspired spice rub. 🙌
