🌭 LOADED CHEESE KRANSKY DOGS 🌭

Sometimes the simple cooks taste the best and this one takes minimal effort so be sure to give it a go.

Start with a good quality Kransky, we got these cheese ones from meats here in town, we have tried a few but these are our favourites for taste and texture.

Cook the kransky how you want, we opted to use the pellet but the oven or frying pan is an awesome option too. Cook to 70C to ensure it’s cooked through but you don’t want to dry it out.

Serve on your fave buns, topped with finely diced onion, tomato and picked jalapeño and finally for the sauce, we made a 50/50 mix of Greek yoghurt and our Birria sauce.

🌯 BREAKFAST WRAP 🌯

We don’t really do breakfast in our house but breakfast for lunch…. Yes please 🙏🏽

We fired up some briquettes for the kettle and chucked on the flat plate.

A fresh wrap, sour cream, grated mozzarella, hashbrown, egg(for wifey), streaky bacon, our Birria sauce and a Texan snag pressed into a patty seasoned with some of our Bang’n Beef rub and topped with more mozzarella and a little spring onion on top.

We love our Birria sauce on meals like this. It’s rich tomato flavour adds that little bit of zing for this comfort feed on a cold winter’s day in Orange.

🐖 DRY STYLE PORK RIBS 🦴

I stumbled upon this method online and just had to try it out, super easy and a quick cook.

We got our hands on some nice meaty baby back style ribs and removed the membrane off the back gave them a quick trim.

We fired up some briquettes, and made a snake in the kettle using the with a couple pieces of peach for some smoke. Getting the temp up to 300F/150C for a hot and fast cook.

Make up a mop using half a cup of water and also white vinegar and 1/4 cup of your favourite pork rub, you know we used our Sweet Papi Pork.

Once the kettle was at temp we put the ribs in and gave them a mop. Reapplying every 15 -20 minutes, the ribs were ready after approx 2 hours. We rested the ribs on our camper and hit one last time with the mop before applying a generous coating of our Sweet Papi Pork rub and allowing it all to rest for 10 minutes before cutting.

The blend of the smoke, vinegar and rub complimented each other so well, we highly recommend trying these.

🐖 PORK ROAST 🍽️

With the parents in town for the weekend, what better way to impress than with an roast from !!

Starting the day before we used a jaccard on the skin before coating with a generous layer of table salt.Then we popped into the fridge for 24 hours for the skin to dry out. ⏰

On the day of the cook we prepped the kettle with .

Taking the pork out of the fridge ahead of time to warm up a little, we scraped off the the salt off, scored the skin and gave the meat side a hit of our Sweet Papi Pork and into the kettle it went.

After about 1 hour 15mins the pork hit an internal temp of 65c, then it was time for a rest.

Now’s the time where you bump your volume up and listen to the knife along the crackle 👂

Thick slices of pork and crackle teamed with roast veggies, peas and gravy we got a raving review from the family 🥳
