10 years of Crosdales BBQ

Wild to think, that in September, 2016 I was sitting on the balcony in Edmonton, Canada and got the first draft logo back from Shell and the business started.

A small idea took me across the world and a big dream brought me home.

We've been to Perth, Melbourne, Hamilton Island, parts QLD, Canberra and most of NSW. We're regulars in the Southern Highlands, Central Coast Hunter Valley and the South Coast. No matter how far we've taken our BBQ, the Hawkesbury is home.

At the heart of what I set out to achieve was to bring good food to good people, to make people happy, to make sure no matter their background they had a seat at our table. Looking back, I think we've done that.

To our suppliers that have been with us from the days of 1 case of brisket a week - thank you. Good food starts with good suppliers, and we got the best.

To those that have tried our food, took a chance on us, waited in a line, shared a social post, liked a video or just wanted to see what the fuss is about - thank you.

Mum appreciation ✨

There's a lot that goes on behind the scenes to make sure your wedding, your engagement, your corporate event, your exclusive catering or your divorce party (yep, we gotta do more!) goes smoothly and it all starts and ends with Mum.

Long prep days, long hours cleaning up, ensuring items are packed, chopped and prepared properly. Plus making sure the garden is watered and that my attitude is given back to me when I'm tired and a jerk.

Mum also lets me swear and carry on, throw chicken wings into the sunset, mutter and carry on. That's enabling and important to help keep me focused.

She is the back bone of this business, I just cook.

So yesterday, I posted a story that said I was handin' over social media and y'all messaged and were concerned I was dippin' out and giving away full control..

Well, I'm still here!

After 10 years of posting far less than I should and having basically an uninteresting social presence, somethin' had to change...Instagram isn't just pictures anymore and apparently reels just aren't somethin' y'all taking fishing haha

I've made some of my best mates through this page, I still need to creep on Beard Street BBQ , I still gotta send unhinged Aussie meme's to Chris Cano , I'm still out to be proud of Brad Palmerque and still gotta slide into countless DM's about your brisket techniques 💕

Keisha, Brooke, Macayla and the other girls will take care of the enquiries (we all know I'm trash at replying), create reels and videos (I ain't dancin') and grow our social presence!

With wedding season now in full swing, I'm concentrating on YOU, the food, the experience and the memories - the girls will take care of the rest 💛

Also, this picture is me on tv with Robert DiPierdomenico and Dipper's Backyard BBQ Wars (apparently heaps fat, too). It's lost to time, which is good cause I talked about my nuts a lot and couldn't cook beef cheeks. But hey, Channel 7 & Channel 9 - I'm ready to be on TV again, call me.

Naidoc Week 2026 🇦🇺

This year we did somethin' wildly different to sauces, jams and marmalades and set about truly showcasing bush food and unique Australian flavours.

Sourcing was a challenge, cooking tested my ability and pushed the boundaries of what we would associate with BBQ, however the results were incredible.

🍑 Australian fig, gold peach, proscuitto and house made fig balsamic salad

🫛 Native Australian yams, Karkalla and Warrigal Green salad

🍊 Hawkesbury oranges, Australian dried currant & micro green salad

🍅 Australian plum & black tomato salad

Proteins were the highlight and showcased what could be sourced from game producers and challenged the tastes..

🥩 Reverse sear kangaroo
🥓 Smoked emu fillet
🥩 Butter brined crocodile fillet
🥓 Braised wallaby
🥩 Pulled brushtail possum

With a range of gourmet game sausages from Alpine Game Meats:
🌭 Emu, Camel, Venison, Crocodile

Plus on the chopping board we had:
🥩 Sliced wagyu brisket
🍖 West Australian smoked dukkah lamb backstrap

Ethically, it was a challenge to cook possum...while it retained a possum shape and cute little tail, but from a finished product point of view it was a pleasant taste. Probably not again, though.

Winterfest 2026 ✨🔥

Fire, smoke, meat, Medieval Kitchen Rules and the best team in Sydney made it happen over the weekend.

From fire finished wings & the Chaps BBQ special, to the Aporkalypse Now & beef short ribs - it was a complete meat feast. Cheerwine, Adams Georgia inspired southern sweet tea, crocodile feet, tasting plates and things on bones - it was all there.

Our favourite event of the year and we're already planning next year and how we can up the offering to be the best we can - for you!

WINTERFEST 2026 ⚔️✨🔥

Okay, I guess I should start posting more..we're back, baby.

This weekend (July 4 & 5)at Hawkesbury Showground, our favourite event of the year and we ain't holdin' back

BBQ favourites, new items, returning classics and just a stupid amount of meat.

Medieval Kitchen Rules - look for our whole hog display from Munro’s Quality Meats delivered with full theatre on our custom medieval cart built by Dale from Delanty Brothers Construction

Live fire - Live fire cooking & displays all weekend on the prokan_grills from Mitch Gregory at HAUS Collective Fire

Till specials - Not on the printed menu.. Aporkalypse Now Sandwich & The Chaps Grilled Flank Hoagie

Breakfast - This year from 7-730am - 11am(ish) we're doin' breakfast! Start your day right...full of bacon, dare you.

Keen to do it again, see all y'all and have some fun. Free bottle o' Cheerwine to the best dressed! 🥤
