Queen Sheba Injera Catering has long been one of Hobart's best kept secrets. With its new residency at In The Hanging Garden the word is spreading fast.
Chef Yodit Tefera first launched the business seven years ago serving up Ethiopian and Eritrean feasts from a food van at The Royal Hobart Show. Initially times were tough finding a market for what were new and unusual flavours for many. Word did get out to foodies though and they went on to be booked at Taste of Tasmania and Dark M**o Winter Feast where a legion of fans began to grow.
It was likewise hard in the early days to find the ingredients needed to create a truly authentic experience but Yodit was undaunted, with spices and flours being flown in from throughout the country. Their signature injera, a flat bread on which curries and condiments are placed upon, is made from the flour of the teff grain which grows either red, white, or black and gives different hues depending on which is used.
Each plate is a delight for all the senses. Mine features tender beef in a rich aromatic gravy but the rest of the sides shine brilliantly also. A carrot and bean salad is fresh and vibrant, the neighbouring beetroot salad earthy and warming. Two different braised lentil dishes are very well executed while a dollop of yoghurt adds richness when stirred through. The dishes are mild in heat but complex in spices with a lot going on with each mouthful. Optional chilli sauce adds another dimension to it all and the injera bread soaks up the flavours and allows you to mop up every drop. They also have chicken, lamb, fish, vegetarian, and vegan options.
It is perfect comfort and feasting food.
For those less hungry I suggest the richly flavoured vegetarian sambusa at just $5 each, similar to a samosa. They have also a number of new options exclusive to the stall such as chicken or chickpea burgers and sliders, and my daughter swears they have the best chips. Staff are wonderfully friendly.
