Behind our Sunshine Organic blend are the pioneers who grow from Fazenda Pedra Preta farm in Brazil. 🇧🇷, brothers Eduardo and Otávio Ferreira. They’re farming regeneratively, restoring the soil instead of depleting it, and the result is sweet caramel and a smooth, buttery body. We’re pretty stoked with the finished product, and it’s become our fastest growing blend.

To say Cam loves coffee would be a massive understatement. After years working for the world’s largest coffee brand and other food & beverage brands across the globe, he decided to swap global scale for local right here at home, in paradise.

When he’s not fine-tuning his desktop roaster, dreaming up his next profile or experimenting with new bean varietals, you’ll find him cheering from the sidelines at his kids’ soccer games, chasing swell to feed his surfing addiction, or fishing out on Lake Weyba with his boys. We weigh every grind for our shot extractions. It minimises inconsistent coffees from one barista to another, and helps maximise the quality of our coffee. It’s how we train our team and cafe partners, and it’s a philosophy we stand by.

An espresso shot extracts in three phases.

Phase 1 — Acidity
Bright organic acids dissolve first as water hits the puck.
Tastes like: citrus, florals, crisp brightness.
Stop here and you get: sour, sharp, thin.

Phase 2 — Sweetness and Body
Sugars and caramelised compounds follow.
Tastes like: chocolate, caramel, honey, real body.
This is the zone. Balance lives here.

Phase 3 — Bitterness
Heavier, woodier compounds come out last.
Tastes like: depth in small doses, dry and astringent in large ones.
Go too far and you get: bitter, hollow, over-extracted.

Dial your grind and time so the shot lands in Phase 2 and cuts before Phase 3 takes over.

Before the pattern comes the canvas. That first small pour breaks through the crema and gives you a surface to work with. Then the milk, glossy, steamed to the right temperature, sweet the way milk gets sweet when you don’t scorch it.

Good latte art isn’t decoration. It’s proof that the coffee and the milk have come together the way they should. If it looks right, it tastes better.
