This week specials:
I found some fresh Aussie Ocean Trout, not frozen which is rare these days. I rubbed it with Recheado, a Goan Portuguese inspired Marsala mix. I than stuffed the fish with coconut sambal, lemongrass, kaffir leaves, ginger and lemons all wrapped in a banana leaf ready to be steamed and finished on the grill.
There is Duck Leg Confit simmered in a fresh coconutty malay-inspired curry with fresh pineapple.
For a warm salad, we caramilsed some minced pork and tossed it with pomelo, cucumber, tomates, red onions, cos, lettuce and toasted glutinous rice powder in a Thai inspired lemony chili dressing.
