If your coffee tastes off and you haven’t changed a thing, chances are your grind needs attention.   Grind size is one of the most powerful variables in espresso, and one of the most overlooked. Here’s a simple way to think about it:  Too coarse? Water rushes through too fast. The result is a thin, sour, underwhelming shot. Under-extracted.  Too fine? Water struggles to get through. The shot runs slow and tastes bitter and harsh. Over-extracted.

Just right? A steady, even flow. A rich, balanced shot with a well-developed crema. That’s what you’re aiming for.

A few things that can throw your grind off without you touching the dial:

☕️ A change in humidity or temperature
☕️ A new bag of coffee, even the same blend
☕️ Burr wear over time

The fix is simple - dial in a little each day and trust what’s in the cup, not just the clock. Your grinder is telling you something. It’s worth listening.

In 2016, we stepped away from the corporate coffee world to create something of our own; something independent, more personal, and more connected to the people and communities we work alongside.
Coffee had already been part of our lives for many years. From our time in food service businesses to decades spent in the coffee industry, we’d seen firsthand that great coffee is only one part of what makes a café special.
Behind every café are people, stories, hard work, early mornings, familiar faces, friendships and communities.
That’s the part we’ve always loved.
When we started Synergy, our goal was simple - to build a business based on genuine relationships, personal support and a shared love of coffee.
Ten years later, we’re incredibly grateful for the café owners, teams, suppliers and coffee lovers who have been part of our story.
