🜃 JOIN US ONLINE FOR THE FIRST OF FOUR VAIRY WORKSHOPS
This is the beginning of a four-part Vairy — Vegan Dairy — workshop series designed to help you build confidence, skill and creativity in making nourishing plant-based alternatives at home.
Each workshop will build upon the one before it, gradually expanding your knowledge and showing you how a few simple foundations can become an abundant range of cheeses, breads, crackers, dips and shared-table foods.
In this first workshop, Marc and Daryl will introduce the core methods, ingredients and principles that will support the entire series.
You will learn how to create food that feels generous, satisfying and deeply nourishing, without relying on dairy, gluten, refined sugar or highly processed ingredients.
This is not food created to follow a trend.
It is the food we prepare in our own lives.
The food that has supported our health journeys.
The food we are proud to share with the people we love.
During the online workshop, you will learn practical techniques, foundational recipes and the reasoning behind the ingredients, so you can recreate everything confidently in your own kitchen and be ready to build on these skills in the next three workshops.
Our food is:
✧ Plant-based
✧ Gluten-free
✧ Refined sugar-free
✧ Protein-enriched
✧ Made with mostly organic, always chemical-free ingredients
✧ Designed to bring pleasure, nourishment and creativity back to the table
Come cook with us from your own home, ask questions, learn at your own pace and begin building your own beautiful Vairy repertoire.

⟢ TASTE WITHOUT BORDERS ⟣
SACRED ALCHEMY & SOVEREIGN TASTE...
✦ VIETNAMESE-INSPIRED SAVOURY PANCAKES ✦
A CELEBRATION OF CRISP TEXTURE, VIBRANT VEGETABLES, AND BIOLOGICAL NOURISHMENT
This week, Taste Without Borders travels to the bustling, aromatic streets of Vietnam. To sit at our table this Wednesday is to participate in a profound Remembering. We do not simply copy traditions; we honour their ancient spirit by bringing them into a terrain-friendly, plant-based kitchen. We are reclaiming the "Sizzle"—the sound of simple, whole ingredients meeting the heat of the fire to create something extraordinary.
✧ THE ANCIENT ALCHEMY: THE "WHY" BEHIND THE PANCAKE ✧
Traditionally known as Bánh Xèo, these golden pancakes are a symbol of everyday nourishment. Historically made from brown rice flour, turmeric, and coconut milk, they represent the wisdom of the earth cooked quickly and filled with the vitality of fresh herbs. We have refined this lattice to align with our high-vibrational, whole-food philosophy.
🥞 The Golden Lattice: Brown Rice & Turmeric
Our pancakes are light, crisp, and golden—a structural masterpiece of Brown Rice Flour. Unlike refined white flour, the brown rice retains its outer bran layer, offering Natural Fibre and a steady energy release to the physical vessel. We infuse this base with Turmeric (The Golden Shield), which provides the warm earth-tone and the active curcumin needed for healthy inflammation balance and digestive support.
🥥 Coconut Milk: The Lunar Lipid...
This is a batter that is creamy and deeply satisfying, free from the gums and stabilisers of the industrial grid.
💧 The Mineral Foundation: Filtered Water & Celtic Salt
By using filtered water, we remove the "static" of chlorine and contaminants, allowing the natural flavours to remain vibrant. This is balanced with Celtic Sea Salt, sun-dried and unrefined, containing over 80 trace minerals that support your cellular hydration and nervous system conduction.
🌿 The Cooling Field: Fresh Market Vegetables — Sourced Directly from the Markets...
Vietnamese cuisine is the art of balancing textures—warm and crisp meeting the cold and vibrant. We serve our pancakes with a colourful selection of Fresh Market Greens, sourced directly from the markets, bringing raw enzyme sparks and a "Light-Quickening" crunch to every bite.
✨ The Dipping Matrix: House-Made Alchemy...
Inspired by traditional flavours, our dipping sauce is a refined blend of Tamari, Garlic, Ginger, and Coconut Nectar. It is a gentle balance of salty and aromatic, providing the "Aromatic Key" to unlock the flavours of the pancake without the use of refined sugars or artificial additives.
✧ THE LIQUID ANCHOR & TERRAIN TREATS ✧
☕ Iranian Dandelion Chai: The Digestive Grounding
Our chai is brewed slowly with Roasted Dandelion Root, Cinnamon, Cardamom, and Ginger. Steamed with almond milk and sweetened with date water, it is the ultimate caffeine-free adrenal support, warming the core and grounding the spirit after the vibrant energy of the meal.
🍫 Carob Alchemy: The Tropical Trio
This week, we offer a trio of small-batch carob treats, designed to provide mineral-rich indulgence without overstimulation.
✧ WHY WE MAKE IT THIS WAY ✧
Sovereignty begins at the plate. We choose to stand in the gap between industrial convenience and biological truth.
"Let your food be your shield and your table be your Destination."
✅ 100% Plant-Based | Organic Ingredients | Gluten-Free | Dairy-Free | Refined Sugar-Free | Seed-Oil Free | Made From Scratch.

✦ TASTE WITHOUT BORDERS PRESENTS ✦
BREAD, CRACKER & DIP MAKING WORKSHOP 🌿🍞

A fun, creative and interactive workshop of fermented bread, crisp crackers, nourishing plant-based dips and the older rhythm of food.

This is not simply a cooking workshop.

It is an invitation to slow down and understand food through process.

To soak.
To rinse.
To ferment.
To blend.
To prove.
To bake.
To dehydrate.
To taste.
To gather.

Together we will explore the foundations of plant-based bread, crackers, and dips, using simple whole food ingredients, traditional preparation methods and the quiet intelligence of time.

This workshop is about more than following recipes.

It is about learning the rhythm behind them.

Because bread teaches patience.
Crackers teach balance.
Dips teach flavour.

And together, they create a table that is generous, colourful, nourishing and deeply satisfying.

At the heart of the workshop is our signature gluten-free, fermented lentil and millet bread base — one living batter that can become:

✨ Plain Loaf
✨ Fruit Loaf
✨ Pan Bread
✨ Wraps & Crepes
✨ Focaccia
✨ Pizza Base

One base.
Many possibilities.

Alongside the bread, we’ll also be making crisp whole food crackers and a range of amazing plant-based dips — bringing crunch, colour, creaminess, brightness and flavour to the table.

Together we’ll explore selected bread variations, beautiful crackers, nourishing dips and simple ways to pair everything into a generous tasting plate.

Because this workshop is not only about watching food being made.

It is about tasting the process.

Feeling the textures.
Understanding the pairings.
Learning the rhythm.
And seeing how simple whole food ingredients can become something abundant, nourishing and deeply satisfying.

Bread teaches patience.
Crackers teach balance.
Dips teach flavour.

And together, they bring us back to the table.

𓂃

✧ WHAT TO EXPECT ✧

✨ A relaxed small-group environment
✨ Hands-on learning and demonstrations
✨ Fermented bread processes explained clearly
✨ Crackers, dips, spreads and platter ideas
✨ A generous tasting plate
✨ Recipes and practical guidance
✨ A beautiful shared platter experience
✨ A warm table atmosphere

No rushing.

No pressure.

Just good food, good people and the gentle rediscovery of nourishment through process.

𓂃

Warm bread.
Crisp crackers.
Bright dips.
Fermented batter.
Shared platters.
Soft conversation.
The sacred kitchen within.

Because perhaps food was always meant to bring us back into relationship —

with nourishment,
with our hands,
with the ingredients,
with the body,
and with one another.

If this speaks to you, we’d love to welcome you to our workshop.

✦ TASTE WITHOUT BORDERS ✦
🌿🔥 THIS WEEK FROM THE KITCHEN 🔥🌿

This week, the wok is calling early.
Ginger warming slowly.
Fresh basil waiting for steam.
Vegetables meeting flame.
Tofu crisping at the edges.
Bread cooling beside chai.
Carob setting quietly in the background.

And somewhere in the middle of it all… the simple rhythm of nourishment returning again.

𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃

🥢🌿 ✧ THIS WEEK’S FEATURE OFFERING ✧ 🥢🌿

This week we’re bringing back one of our beautiful favourites: A basil stir fry inspired by the warmth, fragrance, and atmosphere of Thai kitchens — prepared the Taste Without Borders way.

Fresh. Fragrant. Grounding. Gently warming. Deeply satisfying.

Created with:
✨ Crispy arrowroot-coated tofu
✨ Fresh broccoli & carrots
✨ Spanish onion & seasonal vegetables
✨ Abundant fresh basil
✨ Gochugaru & gentle cayenne warmth

Everything is wok-fried until beautifully caramelised, lightly crisp, and full of flavour, then folded through steamed basmati rice.

Our signature sauce brings it all together: tamari, filtered water, ginger, lemon juice, and Celtic salt. Warm without being overwhelming. Spiced for depth, not intensity. Because we love food that wakes the body gently — not food that shouts at it.

𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃

🌿 ✧ WHY THESE INGREDIENTS? ✧ 🌿

This is not only about eating. It is about understanding what food is doing in the body:

🥢 Tofu & Basmati Rice: Bring plant-based protein, steadiness, and easy warmth. Together, they naturally complement each other to create a complete protein profile.

🥦 Broccoli & Carrots: Bring fibre, minerals, and beta-carotene to support the body's natural cleansing pathways.

🧅 Spanish Onion & Veg: Bring depth, variety, and sulphur compounds that support internal processing.

🌱 Fresh Basil & Ginger: Bring fragrance, circulation, lift, and ignite the digestive fire.

🍋 Tamari & Lemon: Bring bright, savory umami depth without heaviness.

🌶️ Gochugaru & Celtic Salt: Bring minerals, movement, and a little spark without overwhelming the nervous system.

This is why we build the bowl this way: protein, fibre, warmth, minerals, colour, aroma, texture, and balance.

𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃

🍞 ✧ FROM THE FERMENTATION TABLE ✧ 🍞

Served alongside our signature fermented millet & lentil bread. Slowly fermented and prepared with patience.

This week’s loaves:

✨ Plain Millet & Lentil Loaf
Simple, earthy, and nourishing — beautiful beside the basil stir fry or taken home for the week ahead. Fermentation helps soften the grains and legumes, supporting digestibility and bringing more life into the food.

✨ Date, Cinnamon & Walnut Loaf
Something softer. Warm spice, gentle sweetness, and toasted walnut for slow nourishment beside tea. The kind of loaf that feels like it belongs to an older kitchen memory.

𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃

☕🍂 ✧ CHAI & CAROB ✧ ☕🍂

Our signature warming chai will be slowly brewing throughout the morning—warmth in a cup to support digestion, circulation, and comfort.

And this week’s carob creations are feeling especially wonderful...

✨ Peppermint Fudge
Cool, creamy, rich, and refreshing. Peppermint brings cooling freshness and a clean lift after a meal.
✨ Phoneycomb Crunch
A playful take on honeycomb — without the honey! Crunchy golden pieces coated in our signature carob blend for a little golden joy.
✨ Passionfruit Cream
Bright, creamy, tangy, and softly tropical. Bringing vitamin-rich fruitiness and a beautiful lift.

Why Carob? Earthy, mineral-rich, and completely caffeine-free. Carob gives the feeling of chocolate without the stimulation of cacao, making it a beautiful, grounding option that is softer on the nervous system.

𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃𓂃

Warm woks. Fresh basil. Slow chai. Fermented bread. Carob treats. Soft conversation. Shared tables.

Sometimes nourishment is not about discovering something new. Sometimes it is remembering what the body already knows.

𓂃 THE LIVER — THE GREAT ALCHEMIST 𓂃If the heart is the valve, and the lungs are the pump, and the stomach is the furnace...
23/06/2026

𓂃 THE LIVER — THE GREAT ALCHEMIST 𓂃
If the heart is the valve, and the lungs are the pump, and the stomach is the furnace, and the intestines are the river… then the liver is the great alchemist.

The heart keeps life moving. The lungs draw breath through the body. The stomach receives the meal and begins the fire of digestion. The intestines become the inner river, absorbing nourishment and carrying it across the threshold.

And then, the river delivers its gifts to the liver. This is where the body begins another kind of work. Not just digestion—transformation.

The liver receives what has been absorbed and begins to sort, convert, store, filter, neutralise, package, and release. It asks:

What can be used? What must be changed? What needs to be stored? What must be cleared? What needs to leave through bile, bowel, blood, or urine?

The liver is more than a cleaner. It is a chemist. A processor. A protector. A quiet guardian of the inner terrain. It works tirelessly with fats, sugars, proteins, hormones, nutrients, and environmental burdens—quietly, constantly, and faithfully.

✦ THE LIVER AND FOOD ✦
The liver listens to what comes through the intestinal river. Every meal brings information, not just calories.

Is this food recognisable? Is it whole? Is it chemical? Is it asking the body to work harder than it needs to?

The liver does not complain loudly at first, but when the burden becomes too heavy, the body begins to speak through subtle signals:

Chronic tiredness & heaviness

Skin flare-ups & sluggish digestion

Hormonal imbalance & brain fog

Irritability or nausea around rich foods

Heightened sensitivity to smells, chemicals, or additives

These are not failures; they are signals. The great alchemist is asking for support.

✦ FOODS THAT SUPPORT THE ALCHEMIST ✦
The liver responds beautifully to foods that are simple, bitter, mineral-rich, colourful, and clean. These foods do not force the liver; they support its natural rhythm and remind the body: you do not have to carry everything alone.

Bring in the vibrant and the bitter:

Bitter Greens: Rocket, dandelion greens, parsley, and coriander

Earth & Roots: Beetroot and carrots

Cruciferous Support: Broccoli, cauliflower, cabbage, and Brussels sprouts

Clean Movement: Lemon, garlic, turmeric, ginger, artichoke, celery, zucchini, and pumpkin

Pure Lubrication: High-quality, cold-pressed olive oil & clean water

✦ FOODS THAT MAY BURDEN THE RIVER ✦
This is not about fear; it is about relationship. The liver is incredibly generous, but it was not designed to be endlessly overloaded.

Notice what asks a little too much from your system:

Refined sugar & chemical additives

Alcohol

Highly processed foods & poor-quality oils (like refined seed oils)

Excess fried or overly rich foods

Heavy meals eaten late at night

Constant snacking without giving the system a rest

The liver does not need punishment. It needs less burden, more bitterness, more colour, and more space between the work.

✦ A LIVER-HAPPY ALCHEMIST CURRY ✦
A good curry can be a beautiful way to support the great alchemist. Not a heavy, oily, overcomplicated curry, but a warm, mineral-rich bowl made with ingredients the body instantly recognizes.

✨ The Golden Liver-Alchemist Curry Template: Pumpkin, zucchini, cauliflower, broccoli, and greens—simmered gently with ginger, turmeric, garlic, coriander, and cumin. Lightly balanced with coconut milk, fresh herbs, lemon, and a beautiful drizzle of cold-pressed olive oil right at the end.

This kind of meal brings warmth, fibre, and gentle spice. It gives the liver something useful to work with, whispering: Here is one less burden. Here is nourishment you can transform.

✦ THE EMOTIONAL LIVER ✦
Many ancient traditions connect the liver with anger, frustration, pressure, and the feeling of being overburdened. Whether we speak physically or emotionally, the message is exactly the same: too much held inside eventually asks to move.

The liver teaches transformation—not suppression, and not explosion. It asks:

Can this heat become clarity?

Can this frustration become direction?

Can this burden become a healthy boundary?

Can what has been stored finally be safely released?

Before your next meal, pause. Take one breath, soften your shoulders, and offer a small moment of gratitude to the great alchemist for the quiet, constant filtering it does for you every single day. Give it a little more green, a little more water, and a little more rest.

Next in our series: We follow the waters into the body’s sacred strainers—The Kidneys. The quiet keepers of minerals, fluids, pressure, and flow. 🌊
