Some dishes take a little time to find their final form. What started as a ‘Cuscino’, a pillow pasta filled with ricotta, Parmigiano and basil resting on a rich porcini ragù, evolved into a tortellini, which holds the filling just as well but carries more of the sauce, finished with crispy guanciale for crunch.

Good things take time and our O’Connor beef cheek sandwich takes fifteen hours.

Beef cheeks are braised for ten hours, pressed, sandwiched between bread and deep-fried until golden. Each bite is finished with sweet and sour onion jam and creamy black garlic mayo. Enjoy it à la carte or on the waterfront Terrazza bar.

Some news worth sharing. Our Winter Special has been so loved that we are extending it through to 5th October. That means more time to settle in by the water and welcome the warmer days, with a four-course bespoke menu for $99 per person, usually $198.

This Qixi Festival, we are bringing two worlds together.

To mark the seventh day of the seventh lunar month, we have paired Australian mud crab with one of Italy's most iconic pastas, Aglio, olio e peperoncino. Made with fresh house-made tagliolini, mud crab, garlic, chilli, trout roe, sea grapes and lemon zest.
