- homemade triple soup base (chicken, kombu, niboshi) noodles, pork and chicken chasu, sautéed tasmanian nameko mushroom, spring onion, herbed butter.

NATIVE TAN TAN MEN
- homemade nut paste (macadamia, almond, penuts, sesame), spicy paste, noodles, macadamia milk chicken soup, pork beef mince, chinese brocolli, spring onion.

Special shout out to .japan.azumaya for supplying us with the best 天然 (tennen) kombu on the market!
A specialist in Osaka who sources rare wild Hokkaido kelp that’s disappearing in Japan.
Kombu is the backbone of:
• dashi
• ramen broths
• sauces
• umami layering across Japanese cuisine

If the kombu is average → everything downstream is capped.

So you already knooowww that this limited edition menu we’ve created is not to be missed!

And it definitely doesn’t stay for long.

For one week only, Chef — a ramen master from Osaka, takes over the PARCO kitchen.

What’s been built here isn’t just a menu.
It’s years of craft, technique and obsession, distilled into two bowls:

SHO YOU RAMEN
- homemade triple soup base (chicken, kombu, niboshi) noodles, pork and chicken chasu, sautéed tasmanian nameko mushroom, spring onion, herbed butter.

NATIVE TAN TAN MEN
- homemade nut paste (macadamia, almond, penuts, sesame), spicy paste, noodles, macadamia milk chicken soup, pork beef mince, chinese brocolli, spring onion.

This is ramen at its highest level —
refined, reworked and only available for 7 days.

And we’re not stopping there.
More dishes will roll out as the week unfolds!

A RARE CULINARY MOMENT!

Chef Sho — a renowned ramen chef and culinary director responsible for developing some of Japan’s most celebrated ramen menus and concepts — is coming to Melbourne!

From Monday 23 March to Sunday 29 March, he joins PARCO Ramen for a special one-week collaboration.

Together, PARCO and Chef Sho will bring Osaka’s ramen philosophy into the PARCO kitchen, creating dishes that celebrate tradition while pushing ramen into new territory.

A one-week ramen experience Melbourne hasn’t seen before.
