More than a decade after opening in July 2014, Pastuso has unveiled a brand new renovation, a thoughtful redesign drawing on the tones of the Peruvian desert to bring added warmth, texture and intent to the venue.
“What started as a more youthful, energetic space has naturally evolved over time,” says Renee McConnell, who led the refit.
“This was about creating something more grounded and enduring, where every element feels considered and the space reflects the level of the food and service.”
The updated space introduces warmer colours, softer textures and more refined finishes. Standing centre stage is a large Queensland Bottle Tree. While native to Australia, similar species are found in Peru, making it a natural fit for the space. The menu has also been refined, simplifying the offering and doubling down on what we do best.
“It was never about changing what Pastuso is, it was about understanding it better,” says Head Chef Dwi Ayu.
“We’ve simplified the menu to focus on the dishes people really love. It’s about refining what we do and making sure everything on the menu earns its place.”
