Part 2 of 2: Bottarga, from scratch 😄

Bottarga is a delicacy made from salted, pressed, and dried mullet roe. It’s rich in flavour and adds umami to your meals. Part one is up with the first 3 steps of our housemade bottarga process. Here is where it comes together:

STEP FOUR ~ soak in sake to remove the extra salt.

FINAL STEP ~ drying.

Now it’s ready to be used!

One thing is for certain… great flavour takes patience. We love experimenting, creating and expanding our offerings.

Part 1 of 2: Bottarga, from scratch 😄

Bottarga is a delicacy made from salted, pressed, and dried mullet roe. It’s rich in flavour and adds umami to your meals. Here is how we started the process:

STEP ONE ~ remove the excess blood. This is the key to a clean, refined flavour.

STEP TWO ~ ice bath overnight. This slowly removes the rest of the blood to ensure that clean taste.

STEP THREE ~ 12 hours later the blood is fully drawn. Now it’s time to add salt! This draws out the moisture, deepening the flavour.
