Prep: 15 mins
Cook: 40 mins
Total: 55 mins
Servings: 4

🥘 Ingredients
4 bone-in, skin-on chicken thighs
4 medium potatoes, peeled and cut into chunks
2 tbsps olive oil
2 tbsps butter
1 onion, finely chopped
3 garlic cloves, minced
1 tsp dried thyme
1 tsp dried rosemary
1/2 cup low-sodium chicken broth
1/2 cup heavy cream
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Here's the process: 👇

➡️ Step 1: Preheat your oven to 190°C. Season the chicken thighs with salt and pepper. In an oven-safe skillet, heat the olive oil over medium-high heat. Place the chicken thighs in the skillet, skin side down, and sear them until the skin is crispy and golden brown. This should take about 5-6 minutes. Flip the chicken thighs and sear the other side for an additional 3-4 minutes. Remove the chicken from the skillet and set aside.

➡️ Step 2: In the same skillet, add the butter and chopped onion. Sauté the onion until it becomes translucent and slightly golden. Add the minced garlic, dried thyme, and dried rosemary. Cook for another minute until fragrant.

➡️ Step 3: Add the potato chunks to the skillet, arranging them around the onions and aromatics. Pour in the chicken broth and heavy cream. Stir gently to combine everything. Season with a bit of salt and pepper to taste.

➡️ Step 4: Place the seared chicken thighs into the potato mixture, skin side up. Transfer the skillet to the preheated oven and bake for about 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.

➡️ Step 5: Once cooked, remove the skillet from the oven. Garnish with freshly chopped parsley for a burst of colour and added flavour.

➡️ Step 6: Serve the French-style chicken and potatoes directly from the skillet. Spoon some of the creamy sauce over the chicken and potatoes before serving. Pair it with a side salad or crusty bread to complete the meal.

🍗 Elevate your chicken dishes with cumin.🍗

Cumin, an aromatic spice derived from the seeds of the Cuminum cyminum plant, is renowned for its warm, earthy flavour and versatility. Its distinctive taste and aroma make it a perfect companion for a wide range of dishes, particularly when paired with chicken. The marriage of cumin and chicken creates a harmonious fusion that tantalises the taste buds and elevates the overall dining experience.

Here are 4 reasons why cumin and chicken make such a great match: 😍🔥

🍽️ Marinades and Rubs: One of the most popular ways to incorporate cumin into chicken recipes is through marinades and rubs. A simple marinade made with cumin, along with other spices like paprika, garlic, and coriander, infuses the chicken with a rich, complex flavour. Whether it's for grilling, roasting, or pan-frying, cumin-based marinades impart a delightful contrast to the chicken's texture and taste.

🍽️ Curries and Stews: Cumin is a staple in many cuisines, including Indian, Middle Eastern, and Mexican. In these cultures, it's often used to create flavourful curries and stews featuring chicken as the star ingredient. When combined with other spices and aromatics, cumin lends depth and complexity to the sauce, allowing the chicken to absorb and showcase the intricate layers of flavour.

🍽️ Rice and Side Dishes: Cumin isn't limited to just direct pairings with chicken. It also shines in rice dishes, such as biryanis and pilafs, where it imparts its aromatic essence to the entire dish. Additionally, cumin-spiced couscous, quinoa, or roasted vegetables can be served as side dishes to complement the main chicken course.

This Slow Cooker Apricot Chicken recipe is a delightful combination of tender free-range chicken thighs cooked in a flavourful mix of French onion soup mix, apricot halves, and apricot nectar. The slow-cooked dish is served with steamed rice and broccolini, creating a balanced and satisfying meal. Garnish with fresh thyme sprigs for an extra touch of aromatic goodness.

Prep: 15 mins
Cook: 6 hours
Total: 6 hours and 15 mins
Servings: 4

🥘 Ingredients
8 Free-Range Chicken Thighs, excess fat trimmed
1 x 40g packet of French onion soup mix
1 x 410g can apricot halves, drained
1 x 405ml can apricot nectar
1 tbsp cornflour
Steamed rice, to serve
Steamed broccolini, to serve
Fresh thyme sprigs, to serve (optional)

Here's the process:

➡️ Step 1: Begin by heating a generously sized non-stick frying pan over medium-high heat. Place half of the chicken thighs into the pan with the skin side down. Cook them for approximately 3 minutes, or until they achieve a rich golden colour. Flip the thighs over and cook for an additional 3 minutes. Once cooked, transfer the chicken to the slow cooker bowl. Repeat this process with the remaining chicken thighs.

➡️ Step 2: Evenly distribute the French onion soup mix over the chicken thighs in the slow cooker. Introduce the drained apricot halves into the mix, followed by pouring the apricot nectar over the chicken and apricots. Cover the slow cooker and set it to the low heat setting. Allow the mixture to cook for 6 hours, allowing the flavours to meld and the chicken to reach a tender state.

➡️ Step 3: Carefully move the cooked chicken thighs onto a warm oven tray using tongs. Cover the tray with foil to maintain the chicken's warmth. Alternatively, you can opt to place the tray in a preheated oven at 180°C (160°C for fan ovens) for 5-10 minutes without the foil, preserving the crispy texture. Meanwhile, increase the slow cooker's heat setting to High.

In a small bowl, create a smooth mixture by combining cornflour with 1 tablespoon of water. Add this mixture to the slow cooker, stirring it in to combine. Allow the mixture to heat for an additional 5 minutes while covered. Give it another stir to ensure the sauce achieves the desired thickness.

➡️ Step 4: For serving, arrange the chicken thighs and apricots gracefully on plates. Pair them with steamed rice and broccolini to create a well-balanced meal. If you wish, enhance the presentation and aroma by garnishing with sprigs of fresh thyme. Delight in the rich flavours of this Slow Cooker Apricot Chicken, where tender chicken, sweet apricots, and a fragrant sauce combine to tantalise your taste buds.

Delicious. 😋

🍽️ Balanced Heat: Smoked paprika typically has a mild to moderate level of heat. This gentle spiciness complements the natural flavour of chicken without overpowering it, allowing the meat's taste to shine through while adding a pleasant warmth to every bite.

🍽️ Versatility in Preparation: Smoked paprika can be used in various chicken preparations. It can be used as a dry rub for grilled or roasted chicken, stirred into marinades or sauces for braised dishes, or sprinkled over sautéed chicken for a burst of flavour.
