Too fresh? Yes, your coffee can indeed be too fresh! A good rule of thumb is to wait 5 - 7 days for espresso roasted coffee. (The darker the roast, the faster the coffee beans off-gas, so wait 10+ days for lighter filter style roasts).
Super fresh roasted coffee is still releasing the gases from the roasting process at too high a rate. This makes it hard to extract a great shot of coffee. Your extraction will start off looking rich and viscous, but soon turns to a rapid, bubbly waterfall of sour tasting coffee-water emanating from your portafilter.
It's an easy problem to solve - just wait a few more days. It will be worth the wait. And it's a better problem to have than stale coffee!
