The Louise specialises in creating bespoke authentic Barossa wine and cultural experiences and professional and informed staff are keen to share their local knowledge. Executive Chef Kyle Johns guides one of Australia’s finest regional dining experiences at co-located restaurant Appellation. Understated, informed service and intimate ambience complement a menu focusing on locally sourced seasonal produce. This story started with a knock at the kitchen door.

Cucumbers and green apples arrived at Appellation at The Louise at their absolute peak, and the dish was built from there. Kingfish caught in South Australia's Spencer Gulf was cured in kombu, laid under compressed and fresh cucumber as well as a nori puree, and finished with a granita of cucumber, yuzu and green apple.

Cool, clean, and about as close to the season as a plate can sit.

Every Wednesday and Friday evening, guests at The Louise are invited to Swirl Sessions, an intimate hosted tasting led by the growers and w**emakers who know the Barossa's w**es from the ground up.

Guests gather in the lounge for a personally guided tasting led by the w**emakers and ambassadors behind a dedicated label each session. Each session moves through the stories, vineyards and philosophies that shape what’s in the glass.

From the Barossa’s generational custodians to its contemporary producers, Swirl Sessions draws from the full spectrum of the region. Iconic estates known for richly flavoured Shiraz and classic blends sit alongside innovative makers crafting site-driven Rieslings and small-batch releases. No two Swirl Sessions follow the same thread.

This is how a joyful w**e weekend unfolds in the Barossa Valley. To celebrate 175 years of Seppeltsfield, Chief W**emaker Fiona Donald joined us at The Louise for an intimate Appellation dinner, a behind-the-scenes tour through the historic Seppeltsfield precinct, a long lunch at FINO, the iconic 100-year-old tawny tasting, and a generous pour of Seppeltsfield w**es throughout.

A two-night Barossa escape where conversations, new friendships and favourite vintages flowed. A winter weekend well spent.
