Fun story;
These were created in the early days of me dabbling in vegan cooking after I discovered the horrendous (lack of) choices for friends following a vegan diet.
Although I’m not a fan of this diet (long term), or any diet really, I was mortified when we went to go out for a staff meal and the options I was offered for vegan people was hot chips, rice or other fried items.
Eww.
This concerned me greatly so I decided to take up the challenge of creating nutrient dense meals that were vegan friendly but also to be enjoyed by people that don’t identify as vegan.
Over time, our menu became almost 50% plant based (the cooler term) and then when we opened
The Cook Room we decided to be 50/50 and prided ourselves on having something for everyone (if you were relatively normal and weren’t cutting out outrageous amounts of food items which seems to be another trend 😳).
Anyway!
These started off as a meat free patty for a cheese burger.
Were accidentally called falafels for a while, made it into a ‘Falafel Bowl’ that wasn’t, then jumped into a Meatball Sub.
We haven’t made these since we closed The Cook Room (except for mine and Apey’s lunch) and we’re happy to bring them back.
Made from beluga lentils, walnuts, quinoa and sun dried tomatoes and a few other secret ingredients they are seriously tasty.
Of course we soak our lentils before we cook them and then the entire mixture is left to soak overnight.
The next day, we roll and then cook to order in coconut oil.
Not nasty seed oils.
