Our beautiful gable roof ✨️

Yesterday was meant to be our first day of trade, but last week - after months of careful planning and paperwork - we were advised that our ceiling is a 🙅🏼‍♀️ no go.

But we’re determined to find the best way forward without losing the character, history and charm of this beautiful old building.

Originally Boston’s Carriage Works, established in 1893, this building has been part of the local community for well over a century. We feel incredibly lucky to be giving it a new chapter - and we want to do it properly (hopefully without completely hiding it all)

Thank you for all the encouragement especially over the last week. We’re working hard to find the perfect way forward and can’t wait to welcome you in.

We'll get there, and when we do it'll be worth it!

The end is finally in sight.

After months of planning, building, buying, fixing, re-fixing, waiting and wondering if we'd ever get here… we're hopefully opening our doors next week...

A few months ago, Bolt Gippsland was just an idea.

Since then we've packed up for markets in the dark and in the rain, met hundreds of locals, brewed coffees at community events, and worked away behind the scenes to bring our little café to life.

This week we hire our first team.

Next month we open our doors.

If you've bought a bag of beans, stopped for a chat at a market, shared one of our posts or simply followed along—thank you. You've helped us get here.

To Loz, my family + friends, the KSC and all the amazing stall holders and organisers I have met so far - thankyou for fuelling me on!

Hey everyone! 👋 Just a little update from us... we'll be at the Loch Village Variety Market this Sunday with fresh bags of Bolt Coffee ☕

We've recently discovered that indoor markets might just be winter's greatest invention 😅 Warm, dry, and packed with amazing local makers, growers and amazing creatives (my fav sorta people!)

If you're heading down, come say hi and stock up on coffee for your kitchen bench, camping trip or Monday morning

We've been a little quiet lately... but we've got some good news!

Tomorrow we're heading to the Jumbunna Bush Market with fresh bags of Bolt coffee, small batch, air roasted and ready for your kitchen bench, camping trip or Monday morning.

No coffee machine this time—just the beans.

And while we've been quiet, we've also been busy behind the scenes.

This week we received approval to complete the final works on our cafe. It's a milestone we've been working towards for a long time, and it means we're one step closer to opening our doors in August.

We're not there just yet, but we're getting close.

If you're around tomorrow, come and say hello. We'd love to catch up, hear what you've been up to, and send you home with a fresh bag of coffee.

Completely normal-sized display fridge delivery 😅

A few pieces of the new setup are starting to arrive and it’s all starting to take shape!

Also very happy this beauty gets a second life instead of ending up in landfill — trying to keep Bolt as second-hand, high quality, handmade and low-waste as possible where we can ☕️⚙️

Big thanks to Loch Village Foodstore & Cafe for passing it on 🤝 and to the amazing Garry for knowing how to move stuff

That’s a wrap on the Bolt pop up ☕⚡

Today we packed everything down so we can shift our full focus onto the next chapter — our food fit out and permanent space plans.

The last few weeks gave us the chance to test, learn, meet so many LOVELY people and start building the kind of community space we’ve been dreaming about creating- I'm so happy!

Thank you to everyone who stopped by and supported us early. This is only the beginning.
Now it’s time for behind-the-scenes planning mode 🛠️✨
We’ll keep sharing updates as we build it all out!

Today was a bit special.

A handful of people came by, had coffee and a little chat, and were just genuinely so lovely.

Thank you to everyone who popped in — it really meant a lot.

This is exactly what we hoped it would feel like!

The last few days have been a bit of a quiet soft launch.

Making coffees, dialling things in, figuring out the flow… and making sure everything actually works the way it should.

And today a few fantastic things happened...

Our very first milk delivery! Yom - thankyou 🐄

Annnd Bolt Gippsland's first customers 🥰 the amazing .southgippsland trio!

Safe to say — we’re ready.

This is where it started.

A little shed in Perth, a roaster, and a lot of trial + error.

Every coffee we’re pouring next week still comes from here.

I actually just packed up and left this space to move over to Korumburra to build something new… which feels a bit wild to say out loud

Same coffee. New town. One week to go until our doors open in Korumburra. Unreal!!
