Do you have a cake that instantly takes you back to a moment, a place, a feeling? 🤍
For me, it’s this vanilla, apricot and coconut drizzle cake.
Every Saturday morning growing up, my sister and I would visit our grandparents, and Mama would have this cake freshly baked and waiting for us. A simple butter cake with rehydrated apricots, a splash of vanilla and a sprinkle of coconut, topped with vanilla drizzle icing, dried apricots and a sprinkle of coconut — nothing fancy, yet somehow everything. It carries the warmth of her kitchen, the comfort of routine, and the sweetness of childhood.
Forty years later, it became my sister’s favourite during her cancer treatment. No matter how hard the days were, this cake would always bring a smile to her face when I baked it.
Some recipes are more than ingredients — they’re memories, love, and connection.
