South Australian calamari, sliced into fine ribbons and cooked over the fire for gentle smoke. Dressed in reduced duck jus and lemon, served over a marinated tomato salsa and finished with salted cheese and Rio Vista olive oil.

Out in Lyndoch, Ryan Edwards raises his ducks on open pasture, moving them through the landscape in small, quiet groups. A slow way of farming that creates birds with real depth.

We honour that work by ageing the crown for 14 days, curing with ShioKoji, twice cooking, and glazing with burnt honey before carving to order.
