Things to Love About This Recipe
1. It’s all made in one pot - Less washing up, and everything cooks together so the rice soaks up all
those Mexican flavours.
2. It’s hearty and satisfying - Beef, rice, black beans, corn and melted cheese make it a proper
family dinner.
3. It’s great for leftovers - It reheats beautifully, making tomorrow’s lunch or dinner sorted too.

Ingredients
2 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, minced
500 g ground beef mince
1/3 cup tomato paste
1 1/4 cups long grain white rice, uncooked
2 1/2 cups (625 ml) chicken broth or stock
400 g can corn kernels, drained
400 g can black beans, drained
1 capsicum, diced
1 cup green onions / shallots, sliced
2 cups (200 g) cheese, shredded

Mexican Spices
1/2 tsp cayenne pepper
1 1/2 tbsp dried oregano
3 tsp cumin
3 tsp coriander
3 tsp onion powder
2 tsp paprika
1 1/2 tsp salt

Method
1. Heat the olive oil in a large pot over high heat. Add the garlic and onion and cook for about 1 1/2
minutes, until the onion is translucent.
2. Add the beef and cook, breaking it up as you go, until no raw meat remains.
3. Add the Mexican spices and cook for 30 seconds.
4. Add the capsicum and cook for 1 minute.
5. Add the tomato paste and chicken broth, stirring well to combine.
6. Add the rice, corn and black beans. Stir, bring to a simmer, then cover and reduce the heat to
medium-low so it is simmering gently. Cook for 15 minutes.
7. Remove the lid and quickly stir through the green onion and half of the cheese.
8. Smooth the top, sprinkle over the remaining cheese, cover and leave for 1 minute, just until the
cheese melts.
9. Remove from the stove and serve immediately.
