When we took over, our dream was to keep that essence alive while shaping a restaurant that reflects our own spirit — modern, fresh, and deeply connected to both Thailand and Tasmania. That dream is becoming a reality with Lamoon Thai, a place where tradition meets creativity, and where Thai culture blends harmoniously with Tasmania’s rich produce. Every dish tells this story. We honour authentic Thai recipes, balancing spice, sweetness, sourness, and freshness. At the same time, we draw on the best of Tasmania’s ingredients — crisp vegetables, fresh seafood, and seasonal produce — to give our food a distinct identity that belongs to this island. Sine is no stranger to success; she previously run much-loved Monsoon Thai Fusion (Hobart), renowned for its wide range of gluten-free, vegetarian, and vegan-friendly options. Her philosophy has always been that Thai food should be inclusive — vibrant, balanced, and made for everyone to enjoy. That same belief inspires everything we do at Lamoon Royal Thai. The name Lamoon in Thai means tender, gentle, and also well-balanced — just like the harmony of flavours in true Thai cooking.
