Me Wah’s roast department is one of the specialties we’re most proud of :)

It takes hours of preparation and real dedication. After the duck is marinated, it’s hung to dry for several hours -sometimes overnight!

This step is essential, because drying the skin completely is what makes it turn beautifully golden and crispy when roasted.
