Our Kingfish Ceviche is all about letting exceptional ingredients speak for themselves.

Fresh kingfish, dressed in citrus, balsamic and extra virgin olive oil, finished with crispy shallots, delicate herbs and topped with yuzu pearls for little bursts of bright citrus flavour in every bite.

Back from the weekend
 although in small business, can you really call it a weekend? 😅

There are no real days off. Whether it’s chasing deliveries, making dough, deep cleaning, ordering stock, or answering messages, there’s always something that needs doing.

But that’s the reality of building something you care about. Time to do it all again. 🍕đŸ’Ș

What actually makes something sourdough?

The word gets used a lot these days. Many products labelled “sourdough” are still made with commercial yeast, dough improvers, and other additives.

At Paolo’s, we keep it traditional.

Our pizza dough and ciabatta breads are made using just four ingredients:
đŸŒŸ Flour
💧 Water
🧂 Salt
🍞 Our natural sourdough starter

That’s it.

No commercial yeast.
No dough improvers.
No preservatives.

Just naturally fermented dough, time, and patience to create the flavour and texture we love.

Simple ingredients. Traditional methods. Real sourdough.
