Meet the Red Emperor 🐟 Straight from the Whitsundays
Our red emperor comes from the reef waters off Airlie Beach, gateway to the Whitsundays and the Great Barrier Reef. Here's why it's one of Queensland's most prized fish.
The Fish Itself
Red emperor (Lutjanus sebae) is a tropical snapper that lives around coral reefs and deeper rubble grounds across northern Australia. Young fish wear bold red-and-white bands that look a little like the old "broad arrow" markings on convict uniforms, which earned them the nickname "government bream." As they mature, the bands fade into a deep, even crimson.
Slow-growing and Long-lived
Red emperor can live for decades and grow to around a metre long, which is part of why they're carefully managed. Queensland reef fisheries operate under size and catch limits so these fish can grow and breed before they're taken.
Why Chefs Love It
The flesh is firm, white and moist, with a clean, mildly sweet flavour and generous flakes. It holds together beautifully on the grill or in the pan, bakes well whole, and stands up to curries and bold Asian flavours. Very fresh fish is even enjoyed raw as sashimi or crudo.
Why Local Matters To Us
Sourcing from Airlie Beach means a short trip from reef to plate. That's fresher fish, support for Queensland fishers, and a real taste of our own coastline.
Come and try it while it's on 🌊 we will be changing our menu up soon!
