We’re bringing a slice of Exeter to Gosford for a very special afternoon around our table!

Join us on Saturday, 7th of November (12pm – 3pm) as we host Michael and
the family behind DAWNING DAY —a small, family-owned micro-vineyard in the cool-climate Southern Highlands born from a 20-year dream.

Dawning Day is built around making visitors feel right at home, crafting elegant cool-climate Chardonnay, Pinot Noir, Gamay, and playful drops like their
‘Nebb Flanders’—taking Nebbiolo (the serious, powerful grape behind Barolo and Barbaresco) and turning it into something lighter, refreshing, and full of neighbourly fun.

We’re pairing their incredible w**es with a bespoke High Tea spread. Expect honest local food, beautiful pours, and long, slow conversations.”

When: 7th November | 12:00pm – 3:00pm

Where: Dionysia W**e House & Restaurant

Seats are strictly limited for this one-off afternoon. Reserve your spot via the link in our bio!

This October join us as each Saturday we shift our focus to a different Region of NSW.

This Saturday the 10th of October we focus on The Hilltops

This massively underrated and often overlooked region is based around the NSW towns of Boorowa, Harden and Young on the south-western slopes of the Great Dividing Range. Most of the 20 vineyards in the region are around 500m in altitude and produce exceptional trophy-winning cool climate w**es.

Every Glass of Hilltops w**e ordered this Saturday will come with a complementary snack from our kitchen to promote the region and its incredible w**es

Hope to see you for this regional focus and the next Saturday where we focus on Mudgee!

Wild Venison Rack paired with a rich mulled w**e and native Davidson plum jam, finished with a crisp charcoal pangrattato for texture.

Poured right alongside it is Jack’s featured w**e selection for the week—the organic 2023 Block 9 Zinfandel from
Lowe Family W**e Co in Mudgee. It’s an approachable, food-friendly drop with fine tannins and bright berry acidity that balances the deep, gamey flavours of the venison effortlessly.

Tender, smoky, tart & rich. 🥩🍇

A closer look at one of our star plates this season: Wild Venison Rack.

Here’s how the flavors come together:

The Protein: Succulent, lean wild venison rack.

The Sauce: Davidson plum, balancing sweet winter spices with sharp native
fruit acidity.

The Crunch:
Charcoal pangrattato for a smoky, savoury crunch that contrasts the soft, tender meat.

It’s a masterclass in contrast—rich yet refreshing, traditional yet distinctly local.

In the glass: 2023 Lowe Block 9 Zinfandel.

To complete our deep dive into this week’s featured pairing, let’s talk about what’s sitting in your glass.

Crafted by Lowe Family W**e Co at Tinja Lane in Mudgee, this bottle comes from Block 9—a certified organic vineyard block set on high red soil and shale, overlooked by The Zin House restaurant. Dubbed by David Lowe as an approachable, sultry ‘everyday Zin’, it’s built specifically for vibrant, food-friendly dining.

It recently took home the prestigious
Gil Walquist Perpetual Trophy for Best Organic/Biodynamic/Preservative Free W**e at the Mudgee W**e Show, and one pour shows you why:

Aroma & Palate: Inviting notes of toffee apple, dried raspberry, and
sarsaparilla, showing a gorgeous balance of ripe and taut-skinned underripe berry characters.

Structure: Sitting at 14.5% alc with a secure screwcap, fine tannins, and a zesty acidity that keeps every sip clean and refreshing.

Drinking Window: Perfectly approachable now, with the legs to age beautifully through 2032.

Whether enjoyed alongside our Wild Venison Rack or shared over a spread of dark, slow-cooked meats, it’s an extraordinary expression of organic NSW craft.

We are incredibly proud to share that Dionysia W**e House & Restaurant has officially been awarded
2 Glasses in Australia’s W**e List of the Year Awards 2026!

A massive congratulations to our brilliant Sommelier, Jack Goldman, whose dedication to showcasing the absolute best of New South Wales producers made this recognition possible.

Here is what the judges had to say about our Gosford W**ehouse.

“Named after Dionysius, the Greek god of w**e, agriculture and fertility, this Gosford w**e room is dedicated to New South Wales producers, an ethos that extends to b**r and spirits, too. Pick any three from the glass list to form a tasting flight of still w**es - not a bad start, given there are 25 to choose from. It’s great to see the breadth of varieties being grown in the state these days, from Inzolia to Barbera alongside the more traditional Semillon and Shiraz.”

We also want to raise a glass to our fellow local venues raising the bar for dining and drinking across the Coast:

2 Glasses: Congratulations to

The Cowrie
Meribella , and
Queseraterrigal !

3 Glasses: A huge congratulations to
Bells at Killcare Boutique Hotel, Restaurant & Spa 🍃 !

We couldn’t be prouder to share a region with such passionate hospitality teams. Settle in with us this week and let Jack pour you a glass from our award-winning list

Oyster ritual at Dionysia.

Whether you’re catching up with friends or waiting for your main plates to hit
the pass, starting with snacks is a non-negotiable ritual at Dionysia. From freshly shucked oysters to house-baked bites, grabbing a few small plates at the bar sets the tone for a long, slow evening.

The ultimate w**e companion has arrived at the pass: local
Sydney Rock Oysters. Go light and fresh with a crisp Sémillon mignonette (or straight natural), or try them
buttermilk-fried with Davidson plum for that perfect crunch and native tang.

Drop in, meet the team, and let us pour you a glass.

Jack has reached into the cellar for his latest spring recommendation, and this one is a total masterpiece from our friends at Four Winds Vineyard in the Canberra region.

Recognised among the top Riesling producers in New South Wales, Four Winds crafted this 11-year-old Museum Release to showcase the extraordinary depth that comes with extended bottle age. Born from a long, cool ripening season that allowed full sugar and flavour potential to develop on the vine, it is a classically dry Riesling with an intricate citrus profile—evolving from bright lemon into ruby grapefruit and pomelo, with floral lifts of jasmine and honeysuckle. That extra decade of aging adds a noticeable whack of ginger alongside those unmistakable, classic aged Riesling nuances of kerosene and petrol.
