Why do we cup coffee?

Well It’s how we evaluate green beans before making a purchase. By receiving samples or roasting small samples of coffee we can taste and evalutate which then ensures we’re sourcing coffees that meet our standards for quality and consistency.

Then comes Post roast cupping. Which is our quality control. We’re checking that each batch expresses the profile we have developed and is tasting just how we like it.

It’s a constant process of refinement, calibration, and accountability.

COLOMBIA – POPAYAN – CAUCA – WASHED PROCESS

NOTES: TANGERINE, CARAMEL, STONE FRUITS, MOLASSES, MILK CHOCOLATE

Popayàn, situated in the department of Cauca at an elevation of 1,700 Masl, benefits from an ideal topography for cultivating exceptional coffee. Popayàn is sheltered by the Andes mountain range, creating consistent climatic and altitudinal conditions. These factors contribute to the development of coffee beans with sweet and citrus profiles. This particular coffee is de-pulped and washed to completely remove mucilage, then spread on raised drying beds for 5 – 7 days until reaching the ideal moisture content.
