We use Molino Iaquone for its strength, consistency and ability to handle our long fermentation and high-hydration dough. 🌾

Then comes the development.

Our Sunmix starts with a controlled mix before we increase the speed towards the end, building the strength and elasticity we’re looking for.

It’s all about finding the right balance of speed, time and technique.
