Have you heard of Trehalose?

It is a disaccharide sugar obtained from the processing of starch, mainly from corn. This sugar has several notable properties in the food industry. Firstly, Trehalose has approximately half the sweetening power of ordinary sugar, which makes it possible to reduce the amount of sugar in recipes without compromising the sweet taste.

Furthermore, trehalose has the ability to protect membranes and proteins during drying or freezing processes. This makes it particularly useful in food preservation and in stabilising food structure. By absorbing water, Trehalose helps to maintain the light, airy texture in baked goods with a high moisture content, such as cakes and sponge cakes. Conversely, in products with a low water content, such as biscuits and crackers, trehalose helps to preserve their crisp texture.

Glycë – MONO AND DIGLYCERIDE FLAKES

Mono and diglyceride flakes used as an emulsifier.

Glycë acts as a water-in-oil emulsifier and as an emulsion structuring agent.

Its ability to modify the crystallisation of fats results in easier integration of different ingredients and increases the melting point, allowing the creation of solid oils or oil airs.

In addition, this emulsifier acts as an anti-hardening agent in pastry doughs and is widely used in ice cream production.

To use Glycë, it is recommended to put it directly into a fatty medium and heat it until it is completely melted.

Once melted, it is mixed with the rest of the ingredients of the formulation.

Typical dosages of this emulsifier vary between 3 and 6 grams per kilogram of product, depending on the specific application and desired characteristics.

Yödry -YOGURT POWDER⚠️

Adds yogurt flavor to candies, cookies, cookies, fruit and other preparations.

Yoghurt sprayed using the spray-dried technique, which consists of dispersing the product as an aerosol on a base at a very low temperature.

This technique manages to keep all the flavor of the main product and transform it into a fine powder.

It has a high percentage of protein and a low percentage of fat and generates an intense yoghurt flavor to any preparation such as sweets, biscuits, biscuits, fruit and other preparations.

Yesterday I had the honor of meeting the King of Spain, the President of the Generalitat of Catalonia, and the Minister of Agriculture at Alimentaria in Barcelona.

Held every two years, this was the third consecutive edition where I’ve been invited — something I truly consider a privilege. It’s especially meaningful to see the King of Spain taking interest in small businesses that export regional Spanish products to Australia, as in my case.

It was also a proud moment to see the work that PICASSO BITES is doing being recognized — promoting the incredible products Spain has to offer and helping them be discovered and enjoyed on the other side of the world, in Australia.
