Tonic + Ginger is The Old Synagogue’s Southeast Asian dinging space, spanning over two unique levels and lying in the heart of the 1902 Fremantle Synagogue. Exploring flavours from all over this unique part of the world, the menu takes diners on a culinary journey, sampling a range of dishes including an extensive series of vegan and vegetarian plates. Paired with a worldly wine list and a cocktail menu peppered with Asian inspired spice and flavour Tonic + Ginger presents one of Fremantle's most renowned dining destinations. Designed to share, diners are invited to sit under the staple pendant lighting and dine in a multi-award-winning setting. Once again, we’re putting plant-based produce in the spotlight, proving just how much can be done with the humble ingredients of the season…

This year, expect the unexpected! Head Chef Don’s menu plays with familiar dishes in entirely unfamiliar ways, transforming seasonal produce into plates that may have you questioning what’s really in front of you.
