If Simon could only eat one thing forever, this would be it. Our coral trout bianco with lemony olive oil potatoes is fresh like summer, comforting like winter, and basically a big hug on a plate. The kind of dish you don’t just eat.. you savour. And when you get to the bottom of the bowl? You mash those last lemony potatoes into the sauce and wish it never had to end.
