Saturday’s Long Table Lunch 5-Course Degustation at Hamlet Downs Are You Game Series II was a wonderful success.

The winter sun certainly turned on the charm, and our guests enjoyed an afternoon of delicious Tasmanian fare, local Tasmanian sippys, great conversation and plenty of laughter.

The standout favourites? I'd have to say were our Amuse-Bouche of Pani Puri Puff filled with Tuna Ceviche, and the Five Spice Quail served with rice noodles, Asian greens and a velvety miso reduction.

A special shout-out goes to our first-year apprentice, Miley. Every dessert bowl came back completely empty... no small feat after everyone had mentioned to Maître De Steve they were 'so full' .. 👏👏👏 shout-out to my right hand gal KJ who always keeps things rolling in back of house and the laughter flowing.

Thank you to everyone who joined us and made it such a special day. We can't wait to welcome you back again soon.. and with guests also making future bookings for upcoming Supper Club events, the weekend was a grand success

A big thank you to Miley, 1st year apprentice at 1826 Bar & Bistro , here with me on a work experience day in the kitchen helping prep for this weekend's Long Table Lunch.

Miley took on all the components for our dessert course, Aphrodite's Pudding featuring Hamlet Downs spiced and poached quince and figs, house-made Dubai pistachio white chocolate, rose water and crème anglaise ...and she did a fantastic job.

She also assisted with components such as our parsnip and dutch cream garlic mash which is the base for our slow roasted goat dish.

Miley come back anytime!! I'd happily welcome you to back to continue improving your skill set.

In fact after working with Southcentral Workforce Network last year saying how low the stats are for new indentured apprentices in this industry I'm more certain that investing in young people is so important, especially here in regional Tasmania. We will continue to work with them throughout 2026 in their inter-school training program for Hospitality Skills

Sharing skills and supporting apprentices, helps build a stronger local hospitality and food & beverage industry for the future..

A long-awaited milestone...

Today we received formal confirmation from Central Highlands Council that our 'Food Services and Event Planning Permit' development application has been approved... 🚧 Red Tape Completed ✔️

Whilst Steve and I have been welcoming guests and hosting events for a few years now, its wonderful to finally have the official papers in hand after beginning the process back in 2022.

Thank you to everyone who has supported our journey so far... as we collect fresh produce and all the items required for our first Long Table Lunch 5-Course Degustation for 2026, this Saturday it feels a perfect milestone to make in perfect timing.

We look forward to continuing to share memorable Long Table Lunches, Supper Club evenings, events with authentic country hospitality always at its heart, here at Hamlet Downs Country Accom ❤️

Begin your DEGUSTATION EXPERIENCE with a decadent bowl of our famous creamy Tasmanian Cray Fish Bisque with delicate slices of Rabbit Meat. Served with Sourdough Damper Croutons

Then tender but crispy Rannoch Quail lightly dusted in rice flour and flash-fried for a delicate crunch, dressed in a fragrant aromatic five-spice blend. Served over sautéed seasonal Asian greens and silky rice noodles with a velvety miso reduction and shallot oil

A big, big THANK YOU to the 26 wonderful guests who joined us for this weekend's inaugural 'The Supper Club at Hamlet' 👏👏

Friday and Saturday night was everything Steve and I hoped it would be; a room full of conversation, laughter, new friendships, familiar faces, yummy food and enjoying good company. Well we guess it was a success the bookings came straight in for next month's dates 🙏✨️🫂🫶 **11th July Now SOLD OUT

In changing times it's important that businesses pivot and adapt, and as hosted accom bookings naturally ebb and flow in the off-season, it felt like the perfect time to create a new dining experience where people can meet, greet, eat and a space to socialise and gather 'round the table.

Thank you for supporting us and we can't wait to welcome our next guests with a new yummy menu next month and always a special option for our Vegetarian guests.

Until then, we'll be polishing the silverware, setting tables, and preparing another evening of country hospitality.
