Crumbed Gnocchi with Smokey Red Pepper Sauce

Start the New Year with a little crunch and a lot of flavour! Add these to a plate with your favourite cheeses, dips, and meats, and you've got the ultimate spread.

Ingredients
– 500g Grand Italian by Casa Della Pasta Gnocchi
- 1 x 330g jar Roasted Red Peppers, well drained and roughly chopped
– 1 cup whole egg mayonnaise
– 3 cloves garlic
– 1 teaspoon brown sugar
– 1/2 teaspoon smoked paprika
– Salt and freshly ground black pepper, to taste
– 1/3 cup plain flour
– 3 teaspoons garlic powder
– 3 teaspoons oregano leaves
– 1 teaspoon salt
– 1/4 teaspoon white pepper
– 2 eggs, well beaten
– 3-4 cups panko crumbs
– 500mL rice bran oil, for shallow frying

Method
1. In a food processor combine the peppers, mayo, garlic, sugar, paprika and seasonings and process until smooth. Refrigerate until required.
2. Combine the flour with the garlic powder, oregano and seasonings in a bowl. Place the eggs into a second bowl and the crumbs into a third bowl.
3. Toss one quarter of the gnocchi into the flour mixture and toss to coat well. Loosely shake off any excess as you transfer the gnocchi into the beaten egg. Toss the gnocchi through the egg until well coated then allow the excess to drain off as you transfer to the panko crumbs. Toss the gnocchi in the crumbs until well coated then place onto a tray. Repeat until all the gnocchi are coated. Thread 2 gnocchi into each cocktail skewer.
4. Heat the oil in a large frying pan over a med-high heat and shallow fry the skewers until the gnocchi are golden brown, drain well and keep warm until all the gnocchi are cooked. Place onto a serving plate or tasting board with the prepared sauce and serve garnished with fresh herbs. Serve immediately.

Gnocchi with Walnut and Rocket Pesto | Serves 4

This is a deliciously rich and vibrant dish that combines our pillowy gnocchi with a nutty, peppery pesto. The earthy walnuts and fresh rocket create a perfectly balanced mix, making this meal both hearty and refreshing. It’s also a quick option for any occasion.

Ingredients
– 1 x 500g Grand Italian by Casa Della Pasta Potato Gnocchi
– 250g grape or cherry tomatoes
– Olive oil spray
– Salt flakes and freshly ground black pepper
– 60g baby rocket leaves
– 3/4 cup basil leaves, firmly packed
– 1/3 cup walnuts toasted
– 2-3 large cloves garlic, crushed
– Juice of 1 lemon
– 1/3 cup olive oil
– 1/4 cup shredded Parmesan cheese
– Shredded Parmesan, extra for serving
– Extra toasted walnuts, for serving
– Rocket leaves for garnish

Method
– Place the tomatoes onto an oven tray. Spray with oil and season with salt flakes and pepper. Bake at 180°C FF for 8-12 minutes or until just blistered.
– Combine in a food processor the rocket and basil with the walnuts and garlic and process until finely chopped. Add the lemon juice then gradually add the oil in a stream, whilst processing to make a loose paste. Add the Parmesan cheese then process again until smooth and well combined. Season to taste.
– Boil the gnocchi as per the packet instructions then drain well. Reserve a little of the boiling water.
– Quickly toss 2/3 of the pesto through the hot gnocchi and mix so the gnocchi is well coated. If the cheese makes it a little sticky, add a little of the reserved boiling water to loosen.
– Spoon the gnocchi into the serving bowls and spoon over the remaining pesto. Top with roasted tomatoes and a sprinkle of Parmesan and walnuts. Garnish with rocket leaves and serve immediately.
– Spoon the gnocchi into serving bowls, top with the rocket leaves and serve with Parmesan cheese.
