Sunday morning in my kitchen. Soups. Pumpkin soup for joy. Bake a medley of pumpkin, carrot and Dutch cream potato in good olive oil and white pepper. When golden , cool and place in a blender with bone broth stock and 3 tablespoons crème fraiche. Serve w a little parsley pesto which is also blended so easily with 1 cup chopped parsley, 1/4 cup chopped mint, 1/2 cup chopped rocket, 1/2 cup lemon juice, 1/2 cup olive or avocado oil, a good spoonful of goat’s cheese, 1/2 teasp tamari or soy sauce and a drizzle of honey. Barley and vegetable soup for strength. . Toast 1 cup of barley in oil in a saucepan with a clove of garlic and 1 finely chopped brown onion. Pour in 2 cups o beef stock and let the barley absorb it all. Add a finely chopped seeded red chilli if you please. Now heat up the crock pot and add some oil . Throw in onion, carrot, celery, pumpkin, sweet potato, . Coat in warmed oil and let them cook while the barley is reducing. Add barley and 3 cups of stock plus 1 cup of tomato Passata . Cook in crock pot for 4 to 5 hours . In the last ten minutes you can add greens , be it shredded silverbeet, peas beans, or spinach. I like to throw in bay leaf, along with my Greek Spice blend which is ground in a mortar and pestle. It consists of black pepper seeds,fresh oregano, semi dried parsley, grated lemon peel, lemon thyme,rosemary, basil, dill,marjoram, a pinch of both nutmeg and cinnamon plus pink salt. I use a tablespoon of each and afterward put on parchment in a sunny spot for a day. When dry put in a pretty jar.
