Our Moorabool Valley Duck Confit carries the depth and generosity that winter dining calls for.

Served with pancetta, borlotti bean, warrigal greens and mushroom brodo, the dish builds slowly through rich, savoury flavours and ingredients chosen to complement the character of the duck. The right sides bring the whole table together, adding contrast, texture and another reason to pass a plate around.

Choose the thrice-cooked chips with kombu salt and yuzu aioli for crisp edges and a bright, savoury finish. Add seasonal greens with sesame tamarind dressing and smoked almonds, then make room for charcoal-roasted Dutch carrots with goat’s curd, wattleseed honey and pistachio.
