Tonight marks the conclusion of our final opening night for this year. As we reflect on our journey, we wish to pay heartfelt tribute to a remarkable individual, without whom much of what we do would not have been possible. Last week, we tragically lost Nicola Bucchinno (Nick)—a friend, teacher, mentor, brother, compère, best man, and, at different times, a valued colleague.
Nick was the founder of Nicolas Ristorante in Bunbury, where Michael completed his chef’s apprenticeship. Nick’s enduring passion for seafood, and his dedication to sourcing and preparing fresh, local produce, was passed on to Michael. Through Nick, we established connections with local fishermen and others in the industry—relationships that continue to support our work today. Over the past 25 years, both of us have had the privilege of working with and for Nick. Just a couple of years ago, he could be found behind fryer number three, making the drive from Bunbury every Friday night simply to lend a hand when we were short-staffed.
Our deepest condolences go to Nick’s family: Roni, Albert, Charlie, and Christina, as well as Connie, Tina, Jorgia, and Michaela. Nick’s absence will be deeply felt by many who knew and loved him.
We would also like to extend our condolences to other families who are grieving this Christmas season. To the Swarbrick family—Cheryl, Brad, Tammy, and the extended family—we are deeply saddened to hear of Sprocket’s passing. A great bloke we have known over many years and a genuine asset to the Donnybrook community, contributing so through his involvement with various clubs.
Our thoughts are also with the family of Laurie Smith. Over the years, we have come to know Laurie as a valued customer, and we send our sincerest condolences to his loved ones during this difficult time.
