We have been baking Canelés since 2018, and we have baked thousands and thousands of them so we know our stuff. Canelés are tricky to make. We have done the hard work, so you can enjoy them warm, at home. You’re welcome ☺️

Back in 2018, we realized something: Sydney had no real Canelés like we grew up with in France. And canelés are amazing.

So we decided to make them.

We turned our living room into a lab. We tested temperature curves : burnt, too soft, not crispy enough. We almost quit 140 times.

Then, breakthrough. We hit the markets, you guys loved them. Next, we brought our madeleines to Harris Farm Markets . But you wanted more.

The catch? A canelé has to be eaten fresh. Solution: we make them, you bake them !

Bref. Our Bake-at-Home Canelés are now at Harris Farm Markets .

How much self control was there to begin with ? The question had to be asked … 🤣

Look, during Bastille Festival set up earlier today, we had to test out the ovens on site to make sure the equipment was running perfectly. And naturally, as dedicated bakers, we couldn’t just look at our Madeleines. We had to make sure they tasted as good as they looked. Purely professional research, obviously. 🤷‍♂️🧁 PLUS A Madeleine had kindly volunteered for the quality control testing... 😅🤫👇 Golden, warm, and fresh out of the tray—safe to say the ovens passed the test with flying colors. A few Madeleines might have been harmed during the filming of this video 😝.

The secret behind Sydney's most iconic canelé. 🇫🇷

Since 2018, Sacrebleu has been perfecting the art of the French pastry, and this year they're bringing their copper-mold magic straight to Bastille Festival.
