Crack the top of this crème brûlée and you get the contrast that makes the dish worth ordering in the first place: a thin, torched sugar shell giving way to a soft custard underneath. That custard is set with Papua New Guinea vanilla, which leans more peppery and floral than the sweeter Madagascan vanilla most people know.
Alongside it, an Ebène dark chocolate ganache rolled into a cigar and dusted to look the part, with pistachio for crunch against all that softness.
