Our salsa recipes are forever evolving. We adjust based on the seasonality of the ingredients that are available. And each individual chilli has it's own flavour - sometimes jalapenós are incredibly spicy and sometimes not, and so each batch is slightly different.

Did you know the tuna tostada was created in Mexico City?

Made famous by Contramar, a Mexican seafood restaurant owned by Gabriela Camara. This dish beautifully blends Mexican and Japanese techniques.

Now a staple dish across many Mexican restaurants around the world, this is our take on the Contramar tuna tostada - with ponzu marinated tuna, avocado, jalapeno mayo and pickled jalapenos.

Did you know our tortillas are made using a traditional method dating back to over 3,000 years ago!?

Nixtamalisation is a traditional method where the corn kernels are soaked in an alkaline corn solution overnight, before being ground over volcanic stones in a molino, turned into masa (corn dough) and then rolled and cooked into tortillas?

We are only one of a small handful of restaurants in Australia using this process. It's time consuming but well worth it to have the full experience of a taco from Mexico.
