La Siberia has been in the Silva family since 1870 and is considered one of the most established estates in El Salvador. Now managed by Rafael Jr., the sixth generation of the family to work the land, the farm grows a range of varieties across its steep, high-altitude terrain. Rafael's approach blends the traditional methods passed down from his father with careful attention to each stage of processing.

Finca El Ángel is the most recent addition to the Silva family's portfolio, acquired in December 2022 after Rafael Jr. tasted the first harvest and recognised the farm's potential. Set on the upper slopes of the Santa Ana volcano and planted with five varieties including Red Bourbon, the farm is currently in a period of renovation and transition. Early results have been encouraging. A naturally processed SL-28 from El Ángel placed second in its category at the 2024 El Salvador Cup of Excellence.

Finca La Guachoca has been in the Pacas family since 2008, when they purchased what was then a run-down property on the slopes of the extinct Cerro Verde Volcano between 1410 and 1600 masl. Since 2013 the family have been replanting with specialty varieties including Red and Orange Bourbon, Pacamara, and Bernardina. Alongside their farming work, the Pacas family have developed one of the more considered social responsibility programs in the region, providing health and wellness programs and wages well above the agricultural sector average.

Balbina Sabillon became the first female producer Proud Mary began working with in Honduras in 2018. Coffee has been part of her family for three generations, and today she runs her modest farm alongside her two children. Her land is planted primarily with Parainema, a variety that thrives in the region and expresses itself with extra sweetness on her farm, producing approachable cups with notes of caramel and stone fruit.

Manuel Vallecillo grew up around coffee in Nueva Esperanza before spending years living in the United States. In 2014 he returned to Honduras and purchased Finca Los Primos, planting it entirely with Pacas, a variety that thrives in the cool Santa Barbara microclimate. Each harvest Manuel splits his time between Honduras and Houston, producing coffees that are consistently elegant and layered with notes of yellow plum and black tea.

Benjamin Paz is widely known as one of the most influential figures in Honduran specialty coffee. A producer, exporter, and tireless advocate for the region, he has helped connect farmers and roasters around the world. At his farm Finca La Salsa, high elevation, cool mist, and careful processing shape extraordinary coffees. His Geisha lots have repeatedly placed at the top of the Cup of Excellence, continuing to push the reputation of Santa Barbara forward.

Finca Toño, run by the Aguilera Brothers, sits closest to the family micro-mill and is named after Antonio “Toño” Aguilera. Over 60 years, the family has grown 35+ varieties, blending tradition with innovation. Their dedication consistently earns Cup of Excellence placements, including a 2023 winner from Finca Toño.

Volcán Azul, managed by Alejo Kahle Castro, sits on the fertile slopes of Poás Volcano. Known for precision and care, Alejo’s careful approach shapes every cup, while the family protects 1,500 hectares of rainforest, combining coffee excellence with conservation.
