The "Secret" That Isn't a Secret
Let me tell you the secret to making perfect Pad See Ew.
When I was a kid growing up in Thailand, there was this made-to-order restaurant near home. Childhood memories. We'd always order the same few dishes - and one of them was Pad See Ew.
With a child's curiosity, I'd stand there almost every day, watching the cook. What's her secret? What brand of sauce does she use? How does she make it taste like that?
What I discovered? There was no secret. The sauce was ordinary. Regular brands.
But what made that Pad See Ew unforgettable was the attention to detail.
First - the meat. Marinated until tender. Never precooked. Stir-fried fresh, plate by plate.
Second - the noodles. We cook them through first. Properly.
Third - fire control. The right heat at the right moment.
