Over the past few weeks while developing our own wine list we have also been slowly perfecting our wine pairing to go with our 5-courses chef banquet menu!!!
First course, Salted duck and White Soy Kingfish, Terre a Terre Down to Earth Sauvignon Blanc 2022 – Wrattonbully, SA will perfect elevate the fresh and umami of this two cold dishes
Second course, Beef Puff Wellington and Prawn Toast, the ethereal Dr. Loosen Wehlener Sonnenuhr Kabinett Riesling’s Graceful acidity, the wine showcases its versatility, complementing the crispy, savory delights. Third course, Fungus Reganmian or King Prawn Egg Noodle, the Centare Vineyard Old Block Chardonnay, a product of the Yarra Valley, VIC. Its opulent notes of ripe fruits and balanced oak form the perfect melody to accompany the diverse flavors of this ensemble.
Large course, M7+ Wagyu Char Siu, we have Viticola Mentridana ‘El Mentridano’ 2021, a Spanish red with an audacious spirit. It steps into the arena with a profusion of red berries and wild herbs, a symphony of flavors that marries brilliantly with the smoky, succulent Wagyu Char Siu. The wine's vibrancy becomes the backdrop for the rich Wagyu, transforming each bite into a tantalizing journey of contrast
Dessert course, Mango Sago Coconut Mousse Cake, accompanying this sweet and refreshing dessert is NV Henriques & Henriques Malvasia 10Yo, a fortified wine that will enchant your senses and bring this gastronomic symphony to a harmonious conclusion
