During the process of creating our dishes, we produce all kinds of waste. These trout frames are just as good, if not better than the flesh itself, high in omega, gelatinous and packed with flavour.

We’ve made XO sauce with them in the past and continue to develop recipes with the purpose of using ingredients like these.
