Boost your antioxidant levels in Winter with my Mixed Berry Teacake and have it ready to serve for afternoon tea in an hour and a half!
It’s quite a forgiving recipe so feel free to interchange ingredients by making it gluten free or dairy free if you need to and serve it with a cup of tea.
My current favourite is the Protect Organic Tea Blend (thank you for the recommendation, Ange, !
It’s made with pine needles, star anise, fennel and schizandra berries and is reputed to protect against viruses, boost immune function, support respiratory conditions, detox harmful chemicals and is high in Suramin and Shikimic acid – perfect for current times!

My Happy New Year Cake is something that we serve every New Year’s Eve or New Year’s Day. Traditionally in Greek homes it’s made from a brioche type dough and called Saint Basil’s Cake (Vasilopita in Greek).
Saint Basil is the Greek version of Santa Claus. Over the years however the recipe has been adapted throughout various regions of Greece from a bread into more of a cake and this is my interpretation of the version I grew up with.

A coin is inserted in the cake and whoever is lucky enough to find the coin in their slice is said to be lucky for the coming year! Slices are given out by the head of the household in order from oldest to youngest.
It’s a lovely, light, lemon scented and moist cake due to the addition of yoghurt and taking the extra time to separate the eggs rather than adding them whole. I’ve also added some ouzo and lime juice and zest this time for a bit of variety.

If you’re not a fan of fruit cake at Christmas then you might like to try my Christmas Thyme Cake. It’s essentially a lemon and yoghurt cake but using sheep’s milk yoghurt for a lighter crumb and I’ve added fresh lemon thyme leaves to the mix as well as to the icing. I sometimes add sour cherries to the mix as well. For a more festive look I like to add cherries and raspberries with chopped pistachios with the lemon thyme to decorate. It’s a refreshing dessert with all the lemon flavours after a big Christmas lunch though you could go all out and serve it with some lemon gelato or pistachio ice cream on the side!

You wouldn’t know it in Sydney at the moment but Summer is almost here.
Get in the mood with my Passionfruit and Yoghurt Loaf - so tangy and zesty with a burst of Summer in every bite!
Easily adapted to gluten & dairy free and just as yummy for a simpler version without the crème fraiche topping.
I sometimes use sheep’s yogurt instead of cow’s or coconut yoghurt and it works just as well.

Did you know passionfruit originated in Brazil?
Passionfruit are rich in antioxidants – they help to reduce cellular stress and inflammation in the body. Also rich in Vitamins A and C to boost your immune system as well as potassium and magnesium.
So enjoy a slice or two and let’s look forward to new beginnings this Summer!

It’s a bit of a dreary day here in Sydney so why not brighten it up with my Raspberry and Coconut Crumb Cake! Raspberries and coconut belong together like well raspberries and coconut… a bit of sweet, a bit of sour and you’re suddenly transported to summery vibes! The recipe is easily converted to gluten and dairy free if you need to with some simple swaps, and you can use your favourite bought jam if you don’t want to make the raspberry filling.
The cake itself is light and fluffy and it has a topping of crunchy coconut crumb.

As promised here is the recipe for my Lemon Curd and Coconut Cake posted earlier this week which was eaten with much relish by all for my birthday.
It has a few extra steps with the addition of the home made lemon curd, but if you are short of time or inclination, a bought lemon curd will do just as nicely.
You can easily make this recipe dairy free by substituting with coconut products throughout too.
The sponge was so delicious that I’m going to have to think up another way to incorporate it into another recipe!

We’re in for a super warm weekend in Sydney so you might like to add my Spring Potato and Asparagus Salad to your weekend menu!
It’s the perfect side dish for a BBQ - minimum fuss with maximum flavour!
The flavours are extremely complementary and moreish. The potatoes are imbued with the tangy dressing, soaking up all that goodness. The greens add a refreshing touch, punctuated by the sharpness of the rustic cheese.
I sometimes add roasted and salted macadamia nuts in the summer as well for a more festive vibe.
