It’s World Sake Day, and we’re taking it as a good excuse to remind you: KOI’s incredible sake selection and curated sake flights.

A quick fact for the curious: sake isn’t distilled, and it isn’t technically a w**e either. It’s brewed from rice, water, koji (a mould that breaks rice starch down into sugar) and yeast, using a process unique to sake called multiple parallel fermentation, where that starch-to-sugar conversion and the sugar-to-alcohol fermentation happen at the same time, in the same tank. It’s part of why the flavour range is so wide.
