Every day.

A clean kitchen, the hard work of the previous night made ready for the next day.

Busy or quiet the night before, it matters not. This is my first view of La Fett every day when I walk in the door.

Kudos to my boys for the care and diligence they give me to make the space ready for the next day.

Today's. Missions include pasta production for two other restaurants, all our Mis-en-ples for service and 2 cartons of local Tiger Prawns for many of our customers favourites......

Sorry it's late everyone.......has been a bit of a rough start to the week. Due to more than unfortunate circumstances, Andrea will be away for a further undetermined amount of time. So we shall soldier on.

Entree: Deep fried Camembert wedge with a chill plum sauce.

Pasta: House made lingujne with seared scallops, in a creamy white wine and lemon zest sauce, topped with crispy prosciutto.

Main: Pork Cutlet on roasted chat potatoes and beans with a creamy seeded mustard sauce.

Dessert: Mum's sticky date pudding with vanilla gelati and a Pedro Ximinez Butterscotch Sauce.

Hello Everyone!

Ok, I have settled back in to the kitchen finally, so will be rolling out the weekly specials as I always used to do. Apologies for being off-line for extended times, Andrea has been away for 5 months and running the whole show by yourself can be a big job, so the small things like socials get hit the hardest.

So here we go:

Entree: Sauteed Tiger Prawns in a white wine sauce, crispy bacon, chilli and shaved garlic. Served on our house made spinach fettuccine.

Pasta: Everyone's favourite Slow Braised Lamb Ragu through our Tagliatelle.

Main: Seared Pork Cutlet on roasted chats, green beans and shredded prosciutto, topped with a creamy seeded mustard sauce.

Dessert: Mum's sticky date pudding with a Pedro Ximinez Butterscotch Sauce and vanilla gelati.

Hello everyone.

Apologies for being quiet of late, I am back in the kitchen full time and gave myself some time to re-adapt to a new normal.

So starting off the cooler times with two.of our favourites as we also train a new staff member in the kitchen:

Butter poached King Tiger Prawns on toasted ciabatta with avocado and paprika mayonnaise.

Pasta:
House made Tagliatelle in a rich slow braised lamb ragu.

Hello Everyone.

Been a full on couple of days here. Or rather months. Apologies in advance if I have come across blunt or rude in media, over the phone or face to face. Has been a tough time juggling front of house and back of house, staff and customers while Andrea has been away.

All I can do is my best. For some it seems that is not good enough, but those who know me well will know that I wont let it pull me down. Yes small business is hard and yes in occasionally gets stressful. We get through it and keep going.

Thanks to all our customers that come in to see us and snack on what we cook.

Well I hope everyone had a good weekend whether you were involved with the Iron Man or not. The weather still not making its mind up, but what can we say.....it is the tropics. At least it is cooler. And with cooler, comes the heartier bites....... πŸ˜€

Entree: Prawn and Mozzarella Arancini with a spicy Romesco sauce.

Pasta: House made Tagliatelle in a Thyme butter with roasted butter nut pumpkin and crumbled Persian feta.

Main: Confit Duck Maryland on roasted vegetables and red cabbage jam.

Dessert: Moscato Poached Pears, with a sweet reduction and a honey marscapone.

Well the chicken special has been doing well this week.

Diced prawn an mackerel with a bit of garlic and salt and pepper, piped inside a breast fillet of chicken. Sealed and grilled till done, a roast vegetable medley and a rich dill cream sauce. A perfect winter warmer.

Start with the toasted ciabatta bread, have some creamy Gorgonzola in, with Pears and rocket.

Filling up fast for the weekend, so book in soon.

Well i am back in the kitchen again. I will pop out when and where I can to say hello to you all.

But in saying that, cooking is still something I very much enjoy.

So whats on this week?

Entree: Toasted Ciabatta Bread topped with Gorgonzola, rocket and Pear.

Pasta: House made Tagliatelle with roasted butternut pumpkin, Thyme butter and Persian Feta.

Main: Chicken breast filled with seafood, grilled and served with a dill cream sauce and vegetables.

Dessert: Caramelised apple tart with Vanilla gelati.
