Inspired by the traditional German-Polish style of baking, this loaf is crafted with a balanced blend of wheat and rye, then naturally fermented for over 24 hours to develop its rich flavour and character.
We also activate our sunflower and pepita seeds before adding them to the dough, a traditional process that helps unlock flavour while supporting better mineral availability.

The result is a hearty, fibre-rich sourdough with a beautifully balanced rye flavour, subtle nuttiness, and a satisfying texture. Perfect lightly toasted with cultured butter, your favourite cheese, or simply enjoyed on its own.

Most people think great bread starts with wheat. We decided to challenge that idea.

Our Chickpea Loaf combines chickpea flour, rice flour and tapioca flour with a slow fermentation process to create a loaf that is full of flavour, satisfying to eat, and crafted with the same philosophy as every bread we bake.

What an incredible achievement for our baking team at the 2026 National Artisan Baking Competition, organised by the Baking Association of Australia (BAA) last week!

We are proud to bring home:

🥇 1st Place – Traditional Rye Sourdough
🥈 2nd Place – Baguette

These awards are a testament to the passion, craftsmanship and dedication of our entire team. Baking is made with patience, traditional techniques and a commitment to using high-quality, nutritious ingredients.

At Burleigh Baker, we believe great bread starts with simple ingredients, long fermentation, skilled hands and a team that genuinely cares.

🥖Our Baguettine is made with a blend of sustainably grown wheat and spelt flours, naturally leavened with sourdough and fermented for a minimum of 18 hours to develop flavour, texture and digestibility.

We are proud to share that last week our Baguettine was awarded 🥈 Second Place at the 2026 National Artisan Baking Competition, organised by the BAA (Baking Association of Australia).

This recognition reflects the passion, craftsmanship and dedication our bakers bring to every loaf we make.

🥪Introducing the new sandwich special: The French Beef Dip Sandwich.

Our chefs start with grass-fed Wagyu rump cap, roasted medium to preserve its tenderness and flavour. Each baguette is generously spread with our house-made Café de Paris butter, layered with caramelised onions, sliced beef, cornichons and cheese, before being gently warmed and finished with crisp cos lettuce.

Served alongside a rich house-made jus, crafted from the same beef bones and finished with a touch of Café de Paris butter, for the perfect dip.

Every element is prepared with intention. Every sandwich is built by hand.

🍞Our Mission Loaf is crafted for those looking for more from their daily bread. Made with a blend of stoneground wholegrain wheat, spelt, rye, and purple wheat, it delivers more fibre, more flavour, and more of the grain's natural nutrition.

Fermented for 30–36+ hours, the sourdough culture has more time to transform the grain, supporting better digestibility, improved satiety, and a slower release of energy throughout the day.

Our sourdough bun range:

At Burleigh Baker, we take the same approach to our buns as we do to our sourdough bread: quality ingredients, slow fermentation, no nasties, and no shortcuts.

Whether it's our:

🥯 Sourdough Bagel – steamed New York style and topped with seeds. Made with 15% wholemeal flour and sourdough culture for a lighter, fluffier texture while retaining the character of a traditional bagel.

Olive Oil Bun – vegan, soft, flavourful, and made with extra virgin olive oil. Fermented for 18 hours to develop flavour and texture.

🧈 Sourdough Brioche Bun – made with free-range eggs, grass-fed butter, and a long fermentation for depth of flavour.

Elvis Bun – crisp on the outside, soft on the inside, and perfect for burgers or breakfast rolls. Made from the same dough as our popular Burleigh Special.

🇮🇹 Ciabatta Bun – made using a sourdough-based dough with a touch of yeast, creating a light, open crumb and delicate golden crust. It toasts beautifully while remaining soft enough for easy eating and is perfect for both hot and cold sandwiches.

A high-protein breakfast is one of the best ways to support stable energy, reduce cravings, and stay fuller for longer throughout the day.

That is why we always encourage people to start their morning with a nourishing breakfast first.

Then, when morning tea comes around... that is the perfect time to slow down and enjoy a great coffee and a handcrafted sourdough pastry. ☕️🥐

Fun fact: coffee contains compounds called polyphenols (including tannins) that can reduce the absorption of certain minerals, particularly iron, when consumed with meals.

Now that is a morning worth looking forward to.

Our Sandwich Loaf is made from the same naturally fermented sourdough as our Burleigh Special, but baked in a tin to create the perfect slice for sandwiches, toast, school lunches, and everyday meals.

Slowly fermented for more than 30 hours, it delivers the flavour, keeping quality, and digestibility of traditional sourdough in a format the whole family can enjoy.

Nothing to hide, nothing added, only wholesome ingredients, skilled bakers and the right processes 🤌
