Pow's Pad Thai has come full circle 🍜

This is a story we really wanted to share with you.

It began with a simple question at a small family gathering in our home village... "Where's the best Pad Thai?"

We wanted to find out how Pow's most popular dish in Australia compared. A true authenticity test. When the family heard what we were up to, they were curious and wanted to try Pow's.

So the next morning we set about preparing everything from scratch. Preparing the elements reminded us just how much work goes into a great Pad Thai. With our kitchen processes back in Bundaberg it's something we had taken for granted. It was good to get back to basics.

After all the prep, Pow cooked her Pad Thai and showed cousin Noi how it's done. Then we started delivering plates around the village to our family.

The verdict? Thumbs up all around. 😊

Now this could have been the end of a great story... but it doesn't end there.

On our last day in the village, Noi wanted to cook us Pad Thai. What started as a quiet send-off turned into a family occasion as more of our family began to show up and enjoy Noi's Pad Thai.

Pow's recipe is now the first dish on the menu at Noi's restaurant.

Pow's Pad Thai... started as her recipe in Thailand, refined in Bundy at Pow's Thai Kitchen, and now returning home to Noi's restaurant in Khok Samran. 🙏

Trading hours this week 🙏
Here's a quick update on opening hours while we are still in Thailand...

Sunday 3 May — Open today 5pm to 8pm
Monday 4 May — Closed for Labour Day 🎉
Tuesday 5 May — Open 5pm to 8pm
Wednesday 6 May — Open 5pm to 8pm

We arrive home late Wednesday, so back to normal trading hours from Thursday.

Thursday 7 May to Saturday 9 May — 2:30pm to 8pm
Sunday 10 May — 4:30pm to 8pm

Larb Moo Tod ... ลาบหมูทอด 🌶️

If you haven't tried this dish yet, it might just become your new favourite. 😊

Larb Moo Tod is minced pork seasoned with toasted rice powder, fresh herbs, lime and chilli, shaped into balls and fried until the outside is crispy and the inside full of larb flavour. They are bite sized Thai food bliss in every bite.

Here are some we sampled at a small street side restaurant in Ubon.

Pow's family have their own recipe for this one and it's a favourite for family gatherings and celebrations. It's a dish we're excited to add to the menu for you.

Bringing authentic Thai dishes back to you in Bundaberg is something we love to do. Can't wait for you to try this one.

Our Favourite Restaurant in Ubon Ratchathani ... มีลาภ Melaph 🇹🇭

This is an Isaan restaurant we really have to share with you. 🍜

We first discovered มีลาภ Melaph back in January on our last trip to Thailand. With a jaw-dropping 4.9 Google rating, over 500 reviews and beautiful food photos, we just had to try it. From the moment we arrived, the casual outdoor setting, the friendly staff and the incredible menu ticked every box for what we enjoy in a Thai restaurant.

We got to know the owner Worakit and returned a number of times on that trip. He told us that in only two years they had outgrown the venue and were moving to a new location. What a great problem to have. 😊

So on this trip, visiting the new มีลาภ Melaph was high on the list. We walked in, and within minutes one of the waiters recognised us and gave us a genuinely warm welcome. Shortly after, Worakit came out to say hello. We stayed with friends soaking up the atmosphere and enjoying great food until well past closing, and he was there at the door to farewell us on the way out.

Bigger space, familiar faces (and a few new ones), and the same soul. Still our favourite restaurant in all our travels in Thailand. 🙏

If you are ever in Ubon Ratchathani, มีลาภ Melaph is a must. Our highest recommendation for anyone who truly loves an authentic Thai food experience.

Pow's Thai iced tea - The Thailand Test 🇹🇭

Sharing truly authentic Thai food in Bundaberg is something very close to our heart. Every trip back to Thailand is a chance to see what's new, taste, compare, and make sure that what we do in Bundy is still the real thing.

Something that stood out on this trip... Pun Thai is really taking off. This Thai café chain is popping up everywhere, giving Amazon Coffee a genuine run for its money. The perfect place to sample Thai iced tea and see how Pow's compares.

The verdict? Pow's Thai tea carries the same tea flavour as Pun Thai's. Theirs was slightly less sweet, which made the tea flavour stronger, but we prefer the balance of Pow's recipe. That extra sweetness keeps the flavour going as the ice melts through.

Pow's Thai tea passes the Thailand test. 😊

It's so enjoyable watching the Thai food scene evolve, and coming home knowing that the flavours at Pow's Thai Kitchen are genuinely Thai, not a version that's slowly drifted from its roots over time. 🌿

Pow's Thai iced tea will be on the menu again when we get back. 🙏

While we've been in Thailand spending time with family, the team back in Bundy have done a tremendous job keeping Pow's Thai Kitchen running. A big thank you to Phyfah, Kem, Alin, Achi, Ryu, Ada, Noi and Gop for making this all possible 🙏

This week we have time to do something we love... exploring markets and local restaurants to taste dishes we've been planning to bring to the Pow's menu. So you can try them right here in Bundy 😊 We'll share a few pics and thoughts along the way.

Hi Everyone 👋

It's almost 100 days since we lost Pow's brother, Paiboon 💛

In Thai Buddhist tradition, the 100th day is a special gathering for family to honour him with prayers to help guide his spirit forward. This ceremony means a great deal to us, and we'll be travelling to Thailand to be with family.

We leave on April 19 and return to Bundaberg on May 6.

While we're away, our team will keep Pow's Thai Kitchen open with slightly reduced hours and a trimmed menu so you can still enjoy your Thai street food favourites.

Here are this week's open hours:
Sunday to Friday — 5:00pm to 8:00pm
Saturday (Anzac Day) — Closed

These hours may change and we'll post any updates here. We'll also share some photos and updates from Thailand when we can.
