Apparently itโs National Potato Day, so I give you...

(from a PKU perspective)
There once was a spud, rather plain,
That appeared on our plates once again.
And again.
And again.
And, yep... again.
For the average person, youโre a side dish.
For someone with PKU, youโre practically infrastructure.
Breakfast looking questionable? Potato.
Need to make dinner actually filling? Potato.
Everyone else ordering chips? FINALLY, OUR TIME HAS COME.*
Weโve boiled you. Mashed you. Baked you. Fried you.
Turned you into wedges, hash browns, roasties and chips.
We have tested the limits of what one vegetable can reasonably be expected to contribute to a human diet, and somehow you keep showing up for work.
Youโre not exotic.
Youโre not fashionable.
Nobody is putting you in a tiny bowl and charging $24 for you because youโre a superfood.
But when you live with PKU, you learn to appreciate the dependable things in life.
And you, potato, are nothing if not dependable. ๐ซก
So this National Potato Day, we salute the humble spud:
the filler of plates,
the maker of chips,
the rescuer of disappointing meals,
and an unofficial MVP of the PKU diet.
